Butter - 2 tbsp
Garlic - 5 cloves, minced
Yellow onion - 1, diced
Red bell pepper - ½, diced
Green bell pepper - ½, diced
Rice - 2 cups, cooked
Black beans - 1 ½ cups, cooked
Salt - 1 tsp
Salsa Lizano - 4 tbsp
Cilantro - ½ cup
Eggs - 3, fried
Avocado -1, sliced
PERSONAL NOTE ✒️
Gallo Pinto with fried eggs and avocado is such a hearty breakfast/brunch. I strongly recommend using the original salsa Lizano (I ordered it online). This salsa is a staple Costa Rican condiment. Try it - it is awesome???? My family was pretty happy about this dish. Pura vida! ???? Highly recommend!

Easy Vegan Rice and Beans (Gallo Pinto)
Gallo Pinto is a very popular breakfast dish in Costa Rica. I chose it for my recipe this week because Nicoya Penninsula Costa Rica is one of the 5 Blue Zones, those magical areas of the world where people live longer, healthier lives than most of us here in the USA, often well into their 90's and 100's.
It's very easy to prepare from everyday pantry ingredients, but there is a 'secret sauce' they use that may be hard to find. It's called Salsa Lizano. I have Amazon links below. You can also try Vegan Worcestershire or Jamaican Pickapeppa Sauce.

How to Cook Costa Rican Gallo Pinto | Costa Rica's Typical and Most Popular Breakfast
I've been craving gallo pinto for breakfast! This recipe was given to me by Luis, with some tips coming straight from the top chefs in his family. Here's a recipe video on how to cook Costa Rican Gallo Pinto - Costa Rica's Typical Breakfast!
Gallo Pinto:
3 Cups cooked rice, preferably chilled
1 Heaped cup of beans (black beans, pinto, or small reds are best)
1/2 cup of the bean liquid
1/2 cup of finely diced onion
1/4 cup finely diced sweet pepper
3 cloves of garlic, minced
1 TBSP. dark coloured vinegar (not totally necessary but adds zing)
2 TBSP. Lizano Salsa
4 TBSP. Cilantro
Don't forget there are many ways to enjoy Gallo Pinto!
A plate with fried plantain and fresh cheese, with eggs, wrapped up into a burrito with all those things, filling for empanadas, YOU name it!

HOW TO MAKE GALLO PINTO | Nicaraguan | IN UNDER 2 MINUTES!
Welcome to our Nicaraguan Cooking Channel with Jimena Jimenez. In this video we show you how to make Nicaraguan Gallo Pinto in just under 2 minutes! Please check out our other videos to learn how to make other dishes from Nicaragua & Latin America.
Here are the Ingredients & Instructions Below:
1 Cup of Kidney Beans (in it's own water)
2 Cups of white rice (cooked an hour before)
1/2 white onion
1/2 green pepper
Instructions:
Cooked Kidney beans (prepared in water and garlic)
White rice cooked at least 1 hour before preparing the gallo pinto
In a frying pan, add oil, cook the onion and green pepper, add the beans together with the liquid and let it cook until the water evaporates, add the rice and stir, when they are together, lower the heat and let it cook, stir every 1 minute approximately for 8 minutes. The gallo pinto is ready when the rice has come the same color as the beans.

Bienvenidos a nuestro Canal de Cocina Nicaragüense con Jimena Jiménez. ¡En este video te mostramos cómo hacer Gallo Pinto Nicaragüense en menos de 2 minutos! Consulte nuestros otros videos para aprender a preparar otros platos de Nicaragua y América Latina.
Aquí están los ingredientes e instrucciones a continuación:
1 taza de frijoles (en su propia agua)
2 tazas de arroz blanco (cocido una hora antes)
1/2 cebolla blanca
1/2 pimiento verde
Instrucciones:
Frijoles cocidos (preparados en agua y ajo)
Arroz blanco cocido al menos 1 hora antes de preparar el gallo pinto
En una sartén agrega el aceite, cuece la cebolla y el pimiento verde, agrega los frijoles junto con el líquido y déjalo cocer hasta que el agua se evapore, agrega el arroz y revuelve, cuando estén juntos, baja el fuego y deja que se cocine, revuelva cada 1 minuto aproximadamente durante 8 minutos. El gallo pinto estará listo cuando el arroz tenga el mismo color que los frijoles.
