How To make Garbanzo Cassoulet
Beans:
1 1/2 c Garbanzos (dry)
7 c Water
1 sm Onion :
peeled (whole)
4 Whole Cloves
2 Cloves Garlic
1 Inch Slice Fresh Ginger
1 c Carrots cubed
:
Sauce 2 tb Oil
1 c Chopped Onion
1 tb Garlic :
minced
6 md Tomatoes
2 c Tomato Sauce
1 1/2 c Water
1 ts Dry Basil
1 ts Thyme
Salt And Pepper to taste :
Topping----- 2 tb Oil
1/2 c Parsley
2 c Bread Crumbs
Beans: Soak beans in water overnight. Drain, then add water to cooking pot so beans are covered with 1-2 in. of water. Stick cloves into peeled onion (left whole). Add to pot along with garlic and ginger. Bring to boil; reduce heat, cover and simmer for 45 min. Add carrots; simmer, covered, for 20 more minutes until beans and carrots are tender. Drain, reserving cooking liquid. Discard onions, garlic and ginger. Set aside. Sauce: Heat oil in skillet. Fry onion and garlic till onion is translucent. Stir in tomatoes. Add tomato sauce, reserved bean cooking liquid (or water), basil and thyme. Bring to boil; simmer, covered, for 45 minutes. Add salt and pepper to taste. Set sauce aside. Topping: Heat oil. Fry parsley and 1 cup bread crumbs for about 1 minute. Stir often. Mix with remaining 1 cup bread crumbs in a bowl. Set aside. Assembly: Preheat oven to 350F. Combine bean mixture and sauce in a deep casserole or baking dish. Sprinkle 1/3 of topping mixture on top. Bake for 15 min, then push topping layer down with back of spoon and sprinkle another 1/3 of topping on. Bake another 15 min, repeat procedure and add remaining topping. Bake 10 min, then place under broiler for 5 min or until lightly browned on top. Recipe By :

How To Cook Amazing French Cassoulet

Cassoulet is a popular southern France dish. It's a bean and sausage dish, but many recipes are pretty fancy and complicated. For example, some chefs add duck and goose and a few different kinds of sausages. My simplified version is delicious, and I can use whatever I have in the fridge and cupboard. I believe a good chef can utilize whatever is available to them and does not waste anything.
???? Ingredients:
❣️ 250g of Pinto beans
❣️ 800g to 1000g of Toulouse sausages or Toscana sausages or whatever pork sausages you can find locally
❣️ 400g chopped tomatoes or one can of tomatoes
❣️ 100g to 150g of French smoked lardon
❣️ 2 medium sizes onions
❣️ 5 cloves of garlic
❣️ 1 cup of white wine
❣️ 1 teaspoon of mixed herbs
❣️ 3 to 4 tablespoons of olive oil or goose/duck fat
Preparations:
???? Pre-soak the beans at least for 2 hours, preferably for 4 hours
???? Dice the onions into 1cm cubes
???? Chop the garlic
???? Pan fry the sausages until they are golden brown
Cooking steps:
- Turn on the heat at a low level, add the cooking oil and lardon first, fry until the lardons change color to slightly brown.
- Add the onions and fry at low heat until the onions are soft and transparent.
- Add the garlic then fry for 30 seconds.
- Add the herbs and white wine and fry for another 30 seconds.
- Pour the white wine, mix well.
- Add the tomatoes
- Add the bean, mix well, bring to boil. Simmer for about 1 hour and 15 minutes.
- Add the sausages, stir a bit and cook for another 20 to 25 minutes.
- Serve with rustic bread, i.e., sourdough or country bread.

1 zucchini
Olive oil
Salt & pepper
Preheat oven to 450 degrees F. Roast vegetables for 15-20 minutes until tender.
Cream mixture:
1 cup sour cream
1 cup heavy cream
1 & 1/2 cups mozzarella cheese
Italian parsley (optional)
Bake the vegetables mixed with the cream mixture for 15 more minutes or until golden on top.

What Is Cassoulet?
Cassoulet is a richly flavored bean stew with origins in southern France… and what a satisfying and delicious pot of beans it is! Here I’ve created a vegetable cassoulet that’s as creamy as can be, and brimming with the aromas of fresh herbs and vegetables.
But to me, what makes cassoulet so special is the petite, pale-green flageolet beans. Their sweet flavor and soft texture are simply addictive. Here the tender beans are slow-simmered with a mirepoix of vegetables and served with crunchy sourdough croutons – the perfect contrast to the creamy dish.
Since this cassoulet is made without the large selection of meats that usually goes into the traditional dish, it doesn’t need to be cooked both on the stove and then in the oven. This vegetable cassoulet is simmered on the stove only, making it a much less time-consuming endeavor.
