How To make Garlic Soup Ii
1/4 c Olive oil
6 Cloves crushed garlic (or
-more to taste) 1 1/2 c Fresh white breadcrumbs
3 md Ripe tomatoes - peeled and
-chopped 1 ts Ground sweet paprika
1/2 ts Chilli powder
1 Litre water
2 Eggs, lightly beaten
1/4 c Chopped fresh parsley
1. Heat oil in large pan; add garlic. Cook over gentle heat 1-2 mins
until soft but not brown. Add breadcrumbs and cook over medium heat 3 mins or until they turn a light golden brown. 2. Add tomatoes, paprika, chilli powder and water. Bring to the boil;
simmer, covered, 30 mins. 3. Add eggs in a thin stream to simmering soup. Cook over low heat 2
mins longer. 4. Pour into serving bowl, sprinkle over parsley and serve.

Easy Garlic Soup Recipe
This garlic soup is comforting, creamy and rich in flavor. If you are looking for a soup recipe that will warm you up on cold winter days, this recipe is for you.

Ingredients:
4 tablespoons Olive oil
1 large Onion
2 heads of Garlic
1/2 cup (120ml) White wine *or stock
2 medium Potatoes
4-5 cups (1L) Chicken/vegetable stock
1/2 cup (120ml) Cream
Salt to taste
Pepper to taste
1 teaspoon Oregano
1 teaspoon Thyme
1/2 teaspoon Nutmeg
Croutons
Chopped parsley
Directions:
1. In a large pot heat olive oil, add chopped onion and sauté for 3-4 minutes. Add chopped garlic and sauté for 6-7 minutes, until lightly golden.
2. Pour in white wine and cook for 3-4 minutes, until alcohol evaporates (if you prefer not to use wine, skip this step).
3. Pour in chicken/vegetable stock, add diced potatoes, season with salt, pepper, oregano, thyme and nutmeg. Bring to a simmer and cook until potatoes are tender, about 15-20 minutes.
4. Turn the heat off and using an immersion blender, blend the soup until smooth.
5. Add the cream and simmer for 5-10 minutes. Check the seasoning and if needed add more spices.
6. Prepare the croutons: cut 3-4 bread slices into small chunks. Heat 2 tablespoons of olive oil, add the bread and toast until golden.
7. Pour the soup into a bowl, add some croutons and sprinkle some chopped parsley.

Ingredients for:
1) Italian Garlic Soup:
- Leek – 1 Large
- Yellow Onion – 1 Large
- Olive Oil – ¼ Cup
- Garlic – 2 Heads
- Potatoes– 2 Medium
- Dry Thyme – 1 Tablespoon
- Chicken Stock – 7 Cups
- Salt – 1 Teaspoon
- Black Pepper – 1 Teaspoon
- Heavy Cream – 2/3 Cup
- Fresh Parsley – ¼ Cup
- Rustic Bread – 5 Slices
Preparation:
- On a chopping board, wash and chop a large leek and finely chop one large onion.
- In a heavy pot, preheat a quarter cup of olive oil.
- Add the leek and the onion and leave to sweat for 10 minutes on low heat.
- While cooking, roughly chop 2 heads of garlic and add to the pot.
- Cut two potatoes into dice cubes and add to the pot. Add a tablespoon of dry thyme.
- Add to the pot the chicken stock, season with salt and black pepper, and let simmer for 15 minutes.
- Add heavy cream, mix well, and blend everything until smooth and creamy.
- Chop some fresh parsley and add to the garlic soup. Mix well.
- To prepare the croutons, dice cut rustic bread into cubes and fry slightly until golden and crispy.
- Serve the Italian garlic soup with the croutons and fresh parsley.
