Traditional German apple cake ????????| 100 year old recipe l Apfelkuchen
German apple cake filled with apples, this cake is delicious as breakfast or a dessert. What you'll need to make this traditional German cake are simple ingredients. You can add vanilla extract or almond extract if you like.
Ingredients:
½ cup (125g) butter
⅔ cup (150g) sugar
2 eggs
1 ½ cups (200g) all purpose flour (if you have a scale, I recommend you use it for the flour)
1 Tbsp (15ml) baking powder
If your batter is too thick, you can use up to 2 TBSP (30 ml) of milk
For the crumble:
4 TBSP (57g) butter
4 TBSP (60g) sugar
4 TBSP (30g) flour
In a bowl, beat 125 g butter (room temperature)
Add sugar and mix until soft
Add 2 eggs at room temperature .
Sift flour and baking powder
Mix until the batter is fluffy.
Grease a pan with butter and add parchment paper to the bottom of the pan.
Add the batter,
Peel and cut apples in slices. You may need 2 or 3 depending on the size of apples.
Place apples on top of the batter.
Make the crumble with 4 TBSP of butter, all purpose flour and sugar.
Use your hands to make the crumble.
Place crumble on cake.
Bake at 375F (180C) for 30-40 minutes. I recommend you use an oven thermometer to make sure you have the right temperature.
Let cake cool for 30 minutes before serving.

Ingredients:
For the fillings: 1.5 kg apple Elstar, 3 tbsp of fresh lemon juice, 250 ml apple juice, 4 tbsp. brown sugar, 1 pack Vanille Pudding powder, 50 ml apple juice.
Batter ingredients: 120 gram butter, 150 gram sugar, 200 gram flour, pinch of salt, 2 eggs, 1 tsp. baking powder, 150 gram Crème Fraiche
For the toppings: 50 gram sliced Almonds and 1 tbsp. coconut sugar
It is important to let the cake cool down after baking and put it in the fridge at least for three hours before serving. I put my cake overnight in the fridge.

看到市場上栗子、南瓜、蘋果和提子等都當做的時候,雖然中午的天氣有時還是很炎熱,但秋天的確已經來到了。
.
在首爾,一個像中秋韓國水梨般大的蘋果只是賣HK$5左右,又爽又清甜,好吃得除了普通吃外,不得不令我想做一個蘋果的食譜。
.
如果大家是烘焙新手的話,這個食譜真的很值得推介,沒有什麼特別的技巧,而蘋果的份量佔了蛋糕一半左右,所以吃下去雖然有點甜,但由於有一半也是焗軟的蘋果,所以吃下不會很肥膩。
.
如果沒有冧酒的話,可以用其他甜酒代替,甚至不加也可以。
.
有些食譜在蛋糕上面會加一層金寶,我想省卻步驟,所以便沒有加了,想表面焗得香脆的話,一定要在蛋糕面上灑上一湯匙砂糖,那蛋糕一定可以做到表面香脆呢。

如果放假有空的話,也可以試做這個簡單的蘋果蛋糕喔。材料(六吋盤)
麵粉60克
牛油60克,另加3克作粘貼底盤紙用
糖70克
泡打粉半茶匙
鹽¼茶匙
蛋(大)一隻
雲呢拿籽半條或雲呢拿精華半茶匙
冧酒1.5湯匙
蘋果一個
杏仁片兩湯匙
蛋糕面材料
白砂糖一湯匙
糖霜一湯匙
做法
1. 將牛油紙剪到焗盤的形狀,用牛油紙粘貼在焗盤內
2. 蘋果削皮後切2cm正方粒
3. 牛油先從雪櫃拿出來在室溫稍為放軟
4. 焗爐預熱至170度
5. 將所有乾材料包括麵粉、泡打粉和鹽,輕輕混合
6. 在一個拌碗內加上牛油,然後加入砂糖,用打蛋器以中速打勻
7. , 加入雞蛋拌勻
8. 加入冧酒及雲呢拿籽(或雲呢拿精華)
9. 分三次將麵粉放入麵糊內,用摺疊(fold) 的形式拌勻
10. 加入蘋果粒拌勻
11. 將麵糊放到焗盤內
12. 加入杏仁片及灑上砂糖一湯匙
13. 放入焗爐以170度焗30-40分鐘
14. 在蛋糕面灑上糖霜,便可享用
German Apple Cake
Ingredients: (6 inch pan)
60g all purpose flour
60g butter, plus 3g for fixing the baking paper
70g sugar
1/2 tsp baking powder
1/4 tsp salt
1 large egg
1/2 Vanilla seed or 1/2 tsp Vanilla extract
1.5 Tbsp dark rum
1.5 Apple, peeled, cored
2 Tbsp Almond flakes
Toppings:
1 Tbsp sugar
1 Tbsp Icing sugar
Directions:
Cut the baking paper as the size of the pan. Use the butter to fix it on the pan.
Take the butter out from the fridge in advance so that it becomes softer.
Peel and cut the apple into cube size (2cm)
Pre-heat the oven to 170 degree Celsius.
Mix flour, baking powder and salt.
In another mixing bowl, put butter sugar in and mix it with electric egg beater until it becomes fluffy.
Add egg.
Add dark rum and vanilla seed (or vanilla extract).
Add the flour in 3 batches and fold it to the batter.
Add apple cubes in 2cm cube size.
Transfer the batter to the baking pan.
Add almond flakes and 1 Tbsp of sugar.
Bake for 30-40 minutes at 170 degree celsius.

Easy German Apple Cake - Apfelkuchen
While we were living in Germany, we saw that this classic apfelkuchen was one of the stars of the bakeries in the fall. What I didn't know, was how easy this recipe is to replicate! Now that we are in Asia, I found that this recipe can really be made anywhere with it's simple ingredients.
Please enjoy, and feel free to adapt the recipe to your taste and cupboards! You can replace the orange juice/apple juice with cow's milk, nut milk, or other fruit juices. You can add up to 2 cups of sugar, or as little as 1 1/4 cup without compromising on flavor. If you find some nice adaptions, feel free to comment below!
