How To make German Pancakes
4 Eggs
1 c Flour
1/4 ts Salt
3 ts Sugar
1 1/3 c Milk
1 c Butter (2 sticks)
Cinnamon sugar Juice of 1 lemon jam...suggested are loganberry, boysenberry or seedless raspberry You will need a LARGE skillet for these... Beat the eggs until light and frothy. Add flour, salt, sugar and milk. Beat for 5 minutes more. The batter will be thin, but very smooth and creamy. Place 2 T of butter into the pan for each pancake. Heat until pan is very hot, but don't allow butter to burn. Ladle in enough batter with one hand so that, with the other hand holding the skillet handle and rotating the skillet, there is just enough batter to cover the bottom and slightly up the sides of thepan, but not a lot of excess. This will produce a giant, crepelike pancake. Check the cake by gently lifting the edge with a spatula. When it is nicely browned, tunr the cake. The second side will brown quickly. Place the pancake onto a warm plate, sprinkle with cinnamon sugar then lemon juice, then spread with jam. Roll up like a small jellyroll, sprinle again with cinnamon sugar, cut into two pieces, and serve. In this episode of In the Kitchen with Matt I will show you how to make Dutch Babies also known as German Pancakes. This recipe for dutch baby pancakes is really easy to make. A Dutch baby pancake or German pancake is a large American popover. It is fairly similar to a large Yorkshire pudding. They contain no leavening agents unlike classic American pancakes. But they are commonly served with the same toppings as you would use for pancakes and waffles. The idea of a Dutch baby pancake may have been derived from the German Pfannkuchen, but the current form originated in Pennsylvania in the early 1900s. (take from wikipedia). 6 eggs
1 cup of milk (1%, 2%, Whole) (240ml)
1 cup of all-purpose flour (120g)
2 Tbsp. of butter (28g)
1 tsp. of salt (5g)
1 Tbsp. of granulated sugar (optional) (12.5g)
1 tsp. of vanilla extra (optional) (5ml)

Dutch babies, or German pancakes, are among the most popular dishes on Facebook's Cast Iron Cooking group. Every day someone posts a picture of the dutch baby they made, often with their kids. Dutch babies are very popular with kids because they're very easy to make, they rise very quickly, and they form weird and funny shapes. But for a long time, like many people making dutch babies, I was doing it wrong. I found out I was overcooking my dutch baby every time. And when it's not overcooked, a dutch baby becomes something entirely different from the popular brown-crusted dish seen on Facebook. A properly cooked dutch baby is much more light and fluffy, with a more prominent egg taste. This is delicious on its own -- but this dutch baby is kicked up a notch by adding natural lemon flavor and a lemon glaze. What's more, it's actually a deutsche baby because it's a German pancake.
