1/2 c Butter or margarine; melted
1/2 c Sugar
2 ts Salt
1/2 ts Lemon extract
1/3 c Warm water
1 pk Yeast
1 ts Sugar
2 Eggs; beaten
3 1/2 c Flour; unsifted
centers:
1 lb Prunes; cooked and pitted
1/2 c Sugar
Butter Sugar Cinnamon Combine milk (canned milk, half milk and half water does not have to be scalded), butter, sugar, salt and flavoring in a mixing bowl. dissove yeast in 1/3 c warm water with 1 t sugar. add yeast mixture and beaten eggs. Add flour and mix well until batter makes a soft dough. Beat with a spoon about 20 times. Let it rise until doubled. Knead gently. Divide dough into 2
portions and roll each to a rectangle. Place dough on a cookie sheet. Put half of prunes in each center and dough down each side towads the center. Cover with a clean cloth and let rise in a warm place. Dot with butter, sugar, and cinnamon. Bake at 350~F until light brown, about 20-25 minutes. Makes 2 large coffeecakes. Learn how to make this quick plum cake recipe with a homemade easy streusel and fresh plums for a fast and satisfying summer snack cake.
Serves 10
Ingredients:
Cake
125 grams / ¾ cup + 1 teaspoon plain flour
4 grams / 1 teaspoon baking powder
125 grams / ⅔ cup superfine/caster sugar
1 teaspoon vanilla extract
1 teaspoon lemon zest, finely chopped
125 grams / 4.4 ounces butter, softened
2 eggs
800 grams / 1.76 pounds plums, washed and halved
Crumble topping
150 grams / 1 cup - 1 tablespoon plain flour
100 grams / ½ cup superfine/caster sugar
100 grams / 3.5 ounces butter, cubed and softened
½ teaspoon ground cinnamon
Directions:
- Preheat your oven to 180C/350F and greaseproof a springform cake tin.
- Place the flour and baking powder into a bowl and stir together.
- Add in the sugar, vanilla extract, lemon zest butter and eggs and combine on low until the batter comes together and there is no dry ingredients remaining in the base of your bowl.
- Pour into your cake tin and even out.
- Press your plums cut side down evenly into the batter.
- To make the crumble, place the flour, sugar and ground cinnamon into a bowl and stir together.
- Add the butter and cut into the dry ingredients until the mixture resembles a rough crumble.
- Sprinkle the crumble mixture over the plums.
- Place into the oven and bake for 50 minutes or until lightly golden.
- Remove and allow to cool before taking out of the cake tin.
- Slice it up and serve.
- Dig in!

- 400 g All purpose flour -Weizenmehl (Typ 405 oder 550)
- 130 g Zucker -sugar
- 270 g cold butter- kalte Butter
- 1/2 Pack baking powder - Päckchen Backpulver (7 g )
- 1 tsp Vanilla powder sugar - EL Vanillezucker
- little bit Lemon zest peel - etwas Zitronenabrieb
- A pinch of Salt -eine gute Prise Salz
- 2 Egg - 2 Eier
- Butter for the baking form- etwas Butter für die Backform
- Little bit Powder sugar for decoration -e - Etwas Puderzucker zum bestreuen
- 1 kg plaum fruits - 1 kg Pflaumen
fruchte.
*Bake at 180 degree to 35- 40 minutes

Preparing:
1. Mix the flour and baking powder and sift into a bowl - Mehl und Backpulver vermischen .
2. Add sugar, vanilla sugar, salt, lemon zest, cold butter and the egg - füge Zucker, Vanillezucker, Salz , Zitronenabrieb, kalte Butter und das Ei hinzu.
3. Use a baking machine or hand to knead the dough until a crumbly dough is formed . -
Kneten Sie den Teig mit einer Backmaschine oder Hand, bis sich ein krümeliger Teig bildet
4.flatten the butter dough into the baking form and rest for about 15 minutes -
Den Butterteig in die Backform drücken und ca. 15 Minuten ruhen lassen
5. Take the 1 kilo or more Plum fruits and cut into the 2 divided sizes and remove the seeds.- nehm die Pflaumfrüchte und in zwei geteilte Größen schneiden
6. The rest dough spread all over crumble on the top of the cake. - Der restliche Teig verteilt sich auf dem Kuchen.
7. Let it cool down completely and serve and enjoy - Vollständig abkühlen lassen, dann servieren and geniessen.

For the Dough:
250g or 2 cups Flour (i used APF)
7g or 1 Tbsp Instant Yeast
75g or ⅓ cup Butter
50ml or ¼ cup Freshmilk
50g or ¼ cup Sugar
16g or 1 small pack Vanilla Sugar
1 Large Egg
Expanding Process: 60mins after Kneading and 60mins after arranging in Cakeform.
10ml extra Evaporated milk
For the Streusel:
150g or 1 and 1/8 cup Flour (i used APF)
100g or ½ cup Sugar
100g Butter
Baking Process: Bake for 30mins in Pre-Heated Oven
