How To make Giffilte Fish
5 lb Fish; equal amounts
-pike, carp, etc 3 Onions; sliced
Celery stalk; sliced 3 Large carrots; sliced
1 -Water; to cover
1 -Salt; to taste
1 White pepper; to taste
4 Eggs
2 tb Matzo meal
1 Salt to taste
1 White pepper to taste
1/4 c Water
Carrots; sliced for pan Onions; sliced for pan 1 bn Beets; sliced (optional)
Have fish man grind: 5 lbs.fish filets-equal amounts; white fish and pike;and a small amount of carp or buffle carp; In a large kettle: heads,bones,and trimmings of fish; 3 onions,sliced; 1 celery stalk,sliced; 2 large carrots,sliced; water to cover; salt to taste; white pepper to
taste; Bring to boil. While this is simmering prepare the fish. Combine in Food Processor: 1 onion; 4 eggs; add mixture to: ground fish; 2 tbs.matzo meal ; salt to taste; white pepper to taste; 1/4 cup water;
Shape fish mixture into balls. I used to do this by hand; chopping in a large wooden bowl with a hack messer. Be CARFUL, you don't want mush but distinct tiny peices. Take another pan; and layer the beets on the bottom; some sliced carrots, onions, fish; repeat with everything but the beets. end eith some carrots. Pour the broth from the OTHER kettle over the fish. Simmer,covered for 2 hours. When cool,remove fish balls to platter and garnish with sliced cooked carrots. Strain broth and chill. Serve with jellied fish broth and fresh ground horseradish. NOTE: The beets are unusal but my Mom and Bubbe ALWAYS used them. They do two things; keep the fish from 'catching' on the bottom and give the broth a ruby red color; but not the fish; they remain white. Ingredients:
for fish patties-
2 & 1/2 pounds of grounded filet of carp fish
1 large onion grated
3/4 cup of matzo meal
2 eggs
1 tablespoon of sugar
salt & pepper to taste
For fish stock-
remaining of the fish (bones, head, tail, skin)
5 small beets cut into thin circles
3 carrots cut into thin circles
2 onions cut into thin circles
the skin of the onions
water
2 teaspoons of white vinegar
3 pieces of clove
about a teaspoon of whole black pepper
few bay leaves
salt, pepper, & sugar to taste

Easy Homemade Gefilte Fish
Recipes for Shabbat from Israel by Moran Pinto
Fish Ingredients:
1 carrot
1 onion
1 lb. (450 grams) ground carp
2 tbsp. sugar
1 tbsp. ground black pepper
1 tbsp. kosher salt
1 cup matzo meal (approximately)
2 eggs
Broth Ingredients:
12 cups (3 liters) water
4 bay leaves
5 whole peppercorns
½ cup sugar
1 tbsp. cracked black pepper
1 onion
Directions:
Place the carrot and onion into a food processor and grind finely.
Mix the carrot and onion mixture into the ground carp.
Add in the salt, sugar, pepper, eggs and matzah meal. Mix and form into balls.
Place all the broth ingredients into a pot and bring to a boil.
Drop in the fish balls and cook for 1 hour.
Refrigerate until serving.

Each year, the Hermelin family of Detroit come together to celebrate Passover (pesach)—honoring the liberation of the Jews from slavery in ancient Egypt—by eating Gefilte fish, the meal that stars in New York-born director Rachel Fleit’s new film.
While simple on the surface, Gefilte is stuffed with history and meaning (just like the recipe itself, which includes a paste of fish, salt, vegetables and egg). However, “Gefilte isn’t about the fish,” suggests the Brooklyn-based writer and director. Instead, “it becomes a lightening rod, in which we project all of our feelings about family, identity, tradition, struggle, loss—and as always, love.”
