I Made THE MOST Flavorful Chili in Existence!
This slow-cooked smoked brisket chili is the ultimate recipe to show off and share with your family and friends. The flavors in this chili are incredible, especially with the two secret ingredients I put in at the end.
Chili, or chili con carne, is a centuries-old recipe consisting of ground or chopped beef with chilis or chili powder. While the first recipes started to show up in San Antonio, Texas, in the early 18th century, it is said to have been created by the Aztecs in the 16 century. There are also many other stories and tales of how this came to be.
In Texas, it's often called a bowl of red and considered a crime if beans are added. However, beans have become a precondition to chili across America in other states. This classic dish has also been redone throughout the United States as there are several different versions like Cincinnati Chili, White Chicken Chili, or even this brisket chili recipe, among many others.
Chili is always good because it's hearty, can feed a big group of people, and can be altered and customized to fit your flavor profiles. In addition, it's also delicious on hotdogs and Smash Burgers.

Chili - feat. Binging with Babish (You Suck at Cooking, episode 101)
Chili. It's delicious. Especially when you learn to make this simple recipe yourself. Or when you manipulate a friend to make beef chili for you. Also, beans. Who knew some people feel so strongly about beans in beef chili. I did. I feel strongly that I like chili with or without beans.

Alright to make this chili do something like this:
Brown around two pounds of beef by putting your skillet on medium high with a teaspoon of oil which you may not need if you beef is more fatty. Break it up in the pan then let it sit until a crust starts to form, then flip and do the same thing again
Dice a large onion and chop it up
Do the same with three cloves of garlic
Heat your chili pot on medium with some olive oil then sauté the onion until it starts to brown
Throw the garlic in during the last couple of minutes
Then add the beef with a teaspoon of salt and break it up more
Add in 28oz/790g crushed tomatoes
2 tablespoon chili powder
1 tablespoon cumin
1 to 1.5 cups beef broth…adjust as necessary
½ tablespoon of brown sugar
15.5oz/439g chatty bastard kidney beans
Then add hot sauce or more spice as desired.
Then add toppings, which don’t count as chili ingredients, because they are on top, not inside. They’re not really a part of the chili. The chili is it’s own thing. It’s like calling ketchup a hot dog. Ketchup isn’t a hot dog. It’s ketchup. It has it’s own life. Don’t argue with me here. It will get you nowhere and it will just waste both of our times. Especially if you’re right.

Ingredients
5 strips uncooked bacon chopped*
1 large yellow onion diced (about 1 cup)
1 red pepper diced
3 cloves garlic minced (about 1 Tablespoon)
1 lb ground beef 455g
1 Tablespoon brown sugar
1 Tablespoon chili powder**
1 Tablespoon ancho chili powder**
1 ½ teaspoons smoked paprika
1 teaspoon cumin
1 teaspoon onion powder
3/4 teaspoons ground black pepper
½ teaspoon salt
1/8 teaspoon cayenne pepper***
1 1/4 cup beef broth 295ml
15 oz dark red kidney beans lightly rinsed and drained (425g)
15 oz black beans lightly rinsed and drained (425)
14.5 oz diced fire roasted tomatoes undrained (411g)
1 7- oz can fire roasted green chilis 198g
1/4 cup tomato paste 66g
1 Tablespoon Worcestershire sauce
Preferred toppings particularly sour cream, shredded cheddar cheese, and corn chips
Instructions
00:00 Introduction
00:29 Place chopped (uncooked) bacon in a large pot or Dutch oven and cook over medium heat until crisp and cooked through. Remove bacon to a paper towel lined plate and drain all but 1 1/2 Tablespoons of grease.
01:17 Add onion and pepper and cook until softened, about 3-5 minutes.
01:33 Add garlic and cook until fragrant (about 30 seconds).
01:45 Add beef, breaking apart with a spatula as you cook. Once meat is partially (about 50%) browned, add sugar and all spices (chili powders, paprika, cumin, onion powder, black pepper, salt, cayenne pepper) and stir well.
02:52 Add all remaining ingredients -- beef broth, beans, tomatoes, tomato paste, chilis, and Worcestershire sauce -- and your cooked bacon and stir well.
03:33 Bring to a boil and cook 1-2 minutes, stirring frequently.
03:45 Reduce heat and simmer, uncovered, stirring occasionally. Simmer for 30 minutes to allow flavor to really develop.
04:05 Serve with preferred toppings (sour cream, shredded cheddar cheese, and corn chips are a must!)
Notes
*For best flavor, DO NOT OMIT THE BACON. However, as someone who spent 23 years not eating bacon I wanted to include tips for those of you who might have the same restrictions. if you wish to make this recipe without bacon you *can* do so by skipping the first step, heating 1 1/2 Tablespoons of oil over medium heat, and then beginning from step 2. On the other hand, if you want additional bacon for garnishing, cook it now and reserve.
**You can substitute one chili powder for the other and use just traditional chili powder or just ancho chili powder, but I personally like the blend of the two.
*** This gives the chili a mild spice, if you like more heat increase to 1/4 teaspoon for a moderate spice. Add additional cayenne pepper at your own risk!

We think this is the best Texas chili recipe and the internet seems to agree. In this recipe, we use the flat of a brisket for creating tender morsels of chili meat that doesn't come out tasting like pot roast.
This recipe is in the style of Texas barbecue restaurants and is a chili recipe with no beans.
It's a bit like a chile con carne recipe, but we slowly simmer these chunks of beef until they are one solid soup. In fact, you might find that using an immersion blender after the chili cooking gives you even more of a Texas quality chili. Just buzz it a few times to make it extra broken up and mixed well. :)
Ingredients Used:
• 4 slices thick cut bacon
• 3-4 lb. beef brisket, trimmed
• Kosher salt, pepper, onion powder – for liberally sprinkling on the meat while browning.
• 2 c. white onion, small diced (one large onion)
• 5 garlic cloves, pressed through a garlic press
• 1 T paprika
• 1 T. cumin powder
• 3 ½ T Texas chili powder, such as Mexene or Gebhardt’s
• ½ t. dried thyme
• ½ t. chipotle chile powder
• ½ t. salt
• 1 quart beef broth
• ½ c. strong black coffee (you can save this from your morning coffee)
• 28 oz. can whole tomatoes, in juice
I have full step-by-step instructions on the blog and you can read lots of reviews by readers who have won chili cookoffs using this recipe, made this chili and modified the recipe, or even substituted smoked brisket.
