How To make Gracia's Black Beans
3 c Dry black beans
1 ts Crushed garlic
1 ts Salt
Hot red pepper (optional) Freshly ground black pepper Extra virgin olive oil 1 lg Yellow onion; minced
Rinse and sort the beans and bring to a boil in a large pot of unsalted water. Simmer for about an hour, stirring occasionally and adding water when needed. Cover and soak overnight. The next day, pour off the soaking water and add enough fresh water to cover the beans. Bring to a boil again and let simmer (stirring occasionally and adding water if needed) until tender enough to eat. Strain, saving some of the pepper and red pepper. In the bottom of a large saucepan, heat enough olive oil to coat the bottom of the pan. Add the garlic mixture to the hot oil and stir once. Add the minced onion and cook until the onion is slightly transparent. Add the beans and some of the liquid and heat until hot enough to eat. Serve over rice. Nutritional Information Per Serving: Protein - 12 grams (24%); Carbohydrates - 33 (68%); Fat - 2 grams (9%); Calories - 192; Sodium - 535 mg.; Cholesterol - 0 mg. Exchanges: 2 bread, 1 lean meat. Beans and Chorizo! Delicious!
Butter beans and Chorizo and pork sausages recipe! Cooked on a stove and finished in the oven, tender, rich and full of flavor.
Top quality Dutch oven:
Recipe:
- 900gr/2lbs butter beans
- 350gr/0,8lbs chorizo plus 2 small pork sausages or if you want just use more chorizo
- 1 onion
- 1 carrot
- 3 chili
- 1 sweet pepper - grilled
- 2 teaspoons smoked paprika
- 3-4 cloves garlic
- 1 tablespoon flour, if you want it more thick, use 1 more or a half
- 2 teaspoons dried mint
- 2 teaspoons savory
- 1 tablespoon fresh thyme
- Salt and pepper according to taste
Tips:
When the beans start to boil, change the water, I do it 2 times and then boil them until soft, but don`t overcook them. Don`t put too much water, it should be a finger over the beans.
When adding the smoked paprika, be careful not to burn it, otherwise it will taste bad.
To easily peel the grilled sweet pepper, put it in a plastic bag after grilling.
Cooking time in the oven 45min on 180C/360f, preheated oven.

These refried beans are sometimes called runny, sticky and retefritos…and the restaurants will serve their refried beans based on the dish being ordered.
… but the first secret is that it all starts with a good pinto bean recipe.
For Terry’s favorite pinto beans recipe we’re gonna use:
– 2.5 C of Casserole Pinto Beans – these our are FAVORITE brand of beans
– 2 Garlic Cloves
– 2 Strips of Thick Cut Hickory & Mesquite Smoked Bacon
– About half J & B Salt Pork
_ A little more or a little less of each ingredient, to your preference
and
– 2 tsp of APC OG, you can salt to taste later
The cooking process for these is super simple in the crock pot. NO soaking needed. You just need to set it to high to get them simmering and check it every hour or so with a little stir. Depending on the crock pot these should take about four to five hours MAX!
And BONUS! In this video we’re also gonna show you what I call the THREE STAGES OF REFRIED BEANS! Stage 1 is the runny bean, perfect for scooping up with a Mexican spoon. Stage 2 is a little drier bean cooked with a little lard perfect for spreading on a tortilla or on a plate. And Stage 3 we add a little more yummy lard and take them to a little toasty finish, incorporating all of the yummy crispy goodness from the bottom of the pan. I love these for chalupas because they won’t make your tortillas soggy and the flavor, oh baby is several notches above the other two.
