Zucchini Bread @mybizzykitchen
My Grammy made the best zucchini bread. However, when I got my hands on the recipe, I realized she used TWO cups of sugar and nearly ONE cup of oil. No wonder it was so good!
I lighted this recipe up by reducing the oil and sugar, and adding nonfat Greek yogurt and unsweetened almond milk.
This recipe as written is NOT overly sweet. But I love adding butter and a drizzle of honey over the top and it is sweet enough for me. Taste the batter and adjust the sweetness to your taste.
