A beloved family recipe that so many of you asked me for ????! B-R-E-A-D ????! Nothing more homely and soothing than homemade baked Bread.
My recipe to make this delightful bread, uses just 4 ingredients and a good mixer, literally 5' preparation, and NO-kneading! Promise ????!! You just need to wait for the bread to rise ⏰!

INGREDIENTS:
600 gr /1.3 lb / 4.8 cups Bread Flour good quality
370 ml/ 1.5 cups lukewarm Water
7 gr / 0.25 oz / 2.5 tsp. dry Yeast
11 gr / 0.4 oz / 2 tsp. Salt
A bit extra Flour and
A bit Olive Oil for flouring the baking dish

Μια αγαπημένη οικογενειακή συνταγή που μου ζήτησαν πολλοί από εσάς! Ψ-Ω-Μ-Ι ????! Τίποτα πιο ζεστό και γεμάτο οικογενειακή θαλπωρή από το σπιτικό, ευλογημένο, χειροποίητο φρεσκοψημένο ψωμί.
Η συνταγή μου για να φτιάξω αυτό το υπέροχο ψωμί, χρησιμοποιεί μόνο 4 υλικά και ένα καλό μίξερ, η ετοιμασία του είναι κυριολεκτικά σε 5' και ΧΩΡΙΣ ζύμωμα! Σας το υπόσχομαι ???? !! Απλά πρέπει να περιμένετε για το ψωμί να φουσκώσει ⏰!

ΥΛΙΚΑ:
600 γρ / 1,3 lb / 4,8 φλ. Αλεύρι για Ψωμί ή Αλεύρι Σκληρό, καλής ποιότητας
370 ml / 1,5 φλ. χλιαρό Νερό
7 γρ / 0,25 oz / 2,5 κ.γ. ξερή Μαγιά
11 γρ / 0,4 oz / 2 κ.γ. Αλάτι
Λίγο επιπλέον αλεύρι και λίγο ελαιόλαδο για να αλευρώσετε το ταψί

Yeast Water Bread Recipe. A pear. It can be the source of a new form of life that leavens bread. I am not an expert in fermented waters but nature always knows better what to do.
The complicated times we are going through (during the pandemic) makes us reflect more on life and its joys. And bread is a simple joy.
Lucky, but also with a lot of effort, we managed to enjoy a few weeks in wonderful Greece, to return with tasty ingredients (so good for a focaccia) and with reloaded hearts.
I made the fermented water simply by pouring water over the pieces of pear and leaving it for 3 days at room temperature. From time to time I shook the jar, twice a day.
I don't believe much in recipes so for focaccia I did not follow a specific recipe but I only aimed to briefly develop gluten in the initial phase (autolyse would have helped but I didn't have time to do it) and then to follow the fermentation. You can find the quantities and the method in the video.
Obviously you can use sourdough starter instead of fermented water. The differences in taste and texture are subtle but I would say they are in favor of fermented waters. The crunv is more delicate, and lacks acidity. But here is a large territory to study absolutely subjectively.

TSOUREKI (GREEK EASTER BREAD)
Tsoureki is a flavourful traditional Greek Easter bread that is a bit brioche-like, with golden brown semi-soft crust and fluffy and stringy inside texture. Its intense aromatic flavor and characteristic smell come from two aromatic spices: Freshly ground mastic (masticha), an aromatic spice from Chios Island, Greece, and mahlab or mahleb (mahlepi), a spice made from ground seeds of cherry. Although this Greek Easter bread (tsoureki) is traditionally served in Easter and the three braids symbolize the Holy Trinity, it is a delicious coffee companion for breakfast or midday snack throughout the year.
