GREEK YOGURT POTATO SALAD | A mediterranean healthy salad recipe.
Greek yogurt, fresh herbs and spicy mustard makes a delicious creamy potato salad.
1 pound - 500gr baby potatoes
1/2 cup Greek yogurt
2 spring onions, chopped
25gr 1oz butter
1tbsp mustard
1/2 tbsp fresh oregano, chopped
Salt and pepper
Boil the potatoes whole in salted water for 15 minutes, until soft. Drain and cut them into half while still hot.
Place them in a bowl and add the butter. Mix well until the butter is melted and the potatoes break up a little bit.
Add the remaining ingredients, salt, pepper, mix well and check for seasoning.
Serve warm immediately or cold as it tastes even better the next day!

How to make a delicious Greek Style Potato Salad
This is a unique delicious and refreshing potato salad.
Very easy to make and the flavors come together like a little party in your mouth. Unlike mayonnaise based potato salads, this one can stay outside in the heat, so perfect for a summer salad. Try it and it will be one of your favorite salads too.
How To Make Greek Potato Salad - Recipe
Made with yogurt, this Greek Potato Salad has a light, refreshing taste.
INGREDIENTS
1 lb (450g) potatoes, chopped 1/2” (10-12mm)
1 Asian cucumber, chopped
1/2 cup plain yogurt
1/4 cup mayonnaise
2 tbsp olive oil
2 tsp vinegar
1 clove garlic, crushed
1/2 tsp dried dill
1/4 tsp pepper
Dash salt
DIRECTIONS
1. Boil potatoes for 10-15 minutes - until fork tender.
2. Whisk together all ingredients other than potatoes and cucumber.
3. Add potatoes and cucumber. Toss to coat with dressing.

Greek Yogurt Potato Salad
A lighter version of a classic potato salad recipe using Greek yogurt instead of mayonnaise. Perfect for those warm summer days when you're looking for a lighter dish.

Serves: 4
Ingredients:
1.5 lbs Boomer Gold Little Potatoes, halved or quartered
1/2 cup plain Greek yogurt
1/4 cup low fat buttermilk
1 tsp salt
1 tsp sugar
1 tsp vinegar
1/2 tsp dry ground mustard
1/8 tsp pepper
4 hard-boiled eggs, chopped
1/4 cup chives, chopped
Directions:
1. In a large pot of boiling, salted water, cook the Little Potatoes until tender, about 10 minutes. Drain, place in a large bowl and set aside to cool completely.
2. In a medium bowl, stir together yogurt, buttermilk, salt, sugar, vinegar, mustard and pepper and pour over cooled potatoes. Add eggs and chives and stir until combined.
3. Serve immediately or chill until ready to serve.
