How To make Green Bean Curry
-================ -(aka Country Curry or -Jungle Curry) Ingredients: 1 lb fresh green beans [if necessary, you may substitute whole frozen
ones] 2 T Thai Curry Paste (I like to use the "Key" brand packets of either "Country Curry" or "Red Curry"; but they are all flavorful. Mae Ploy and Tommy Tang are other good brands. 2 T vegetable oil Bamboo shoots (optional; I like to use a large can of bamboo tips because they are tender and I can cut them into 1/4 inch thick round slices. You can also use a couple of the small cans of sliced bamboo shoots, but they will not absorb the flavor as well. I think carrots cut into coins would also be good, if you like those. I tried potatoes once, but they just disintegrated.) 6 c chicken broth Clean and pick green bean tips. In a dutch oven (or equivalent size vessel), heat oil. Add curry paste and "fry" until fragrant, about 1 minute. Add broth, green beans, bamboo shoots (or other vegetable). Bring to a rapid boil and cook like that for about 15-20 minutes (watching that liquid doesn't reduce too much; add water as necessary). Reduce heat to a hard simmer and continue cooking until green beans are VERY done and have absorbed the flavor of the curry broth. Green Bean Curry Recipe
In this episode, Elaine shows us how to prepare and cook green bean curry. Enjoy.
Serves: 4
Ingredients:
- 1kg green beans
- a pinch of salt
- 1 chopped onion
- ½ chopped tomato
- 1 chopped clove of garlic (optional)
- 1 teaspoon masala
- Oil
Preparation:
1) Cut the ends off the green bean and then cut through it diagonally into smaller pieces.
Cooking:
1) Heat the oil and add the chopped onion, and garlic. Allow it to braise on medium heat for a bit before adding the masala and tomato.
2) When the onions begin to brown, add the green beans and salt then give it a mix.
3) Lower the heat, and allow it to cook with the lid on for 5 minutes.
4) After 5 minutes, check the green beans and give it a mix.
5) Cover it and allow it to cook for another 5-7 minutes.
6) You may need to add a little water if the curry seems a bit dry.
7) Allow it to cook uncovered until any excess water evaporates.
8) When the water has evaporated and the oil comes up, then it's ready.

300g Green beans, sliced into 1 inch long
2 tbsp Oil
1/2 tsp Mustard seed
1 tsp cumin Seeds
2 no Dry red chili
5 to 7 Curry leaves
1 no Onion medium (finely chopped)
1/4 tsp Turmeric powder
1 tsp Chili powder
1/2 tsp Coriander powder
1 tsp Garam masala
1 cup Water
Onion Ginger garlic paste:
3 cloves Garlic
1 no Onion small, Roughly chopped
1 inch Ginger
Coconut Cashew paste:
2 tbsp Grated coconut OR 2 inch coconut piece
5 nos Cashew nuts
2 tbsp Water
Garnishing:
2 tbsp Coriander leaves, chopped

EASY GREEN MUNG BEAN CURRY || VEGAN RECIPE
INGREDIENTS
1 1/2 cups of green mung beans, washed
3 tbsp of cooking oil
1 small bay leaf
1 tsp of cumin seeds
2 cloves of garlic, sliced
1 medium size onion, sliced
1 tbsp of ginger garlic paste
2 medium size tomatoes, chopped
1 tsp of ground coriander
3/4 tsp of ground turmeric
1 tsp of ground red chilli
1/2 tsp of ground cumin
2 vegetable stock cubes
salt to taste
some chopped coriander leaves
NOTE - Adjust the spices according to your taste.

Easy Tasty Green Bean Curry/French Bean Curry (Fiji Style)
Ingredients:
500g green beans (washed and sliced into small pieces)
1 tbsp oil
Salt to taste
2 tbs water
1 small onion chopped
1/2 tsp cumin seeds
1/2 tsp mustard seeds
4 cloves grated garlic
2 tsp cumin powder
1 small chilli
2 sprigs curry leaves
Method:
1. Put your pan on medium heat and when pan gets hot add 1 tbsp oil.
2. Add curry leaves, cumin seeds, mustard seeds, onions and garlic.
3. Give it a quick mix and cook it for 2 minutes till the onions are translucent.
4. Add beans and mix everything well to combine.
5. Add water and 1/4 teaspoon salt and give it a quick mix.
6. Put a lid on and cook for 3 minutes.
7. After 3 minutes mix the beans and taste your salt.
8. Close the lid and cook it for a further 2 minutes.
9. Give it another mix and add cumin powder and mix well to coat everything with the cumin powder.
10. Turn heat off.
11. Serve it with rotis or rice.
12. Enjoy.
