String beans and shallots | Jacques Pépin Cooking At Home | KQED
Jacques Pépin shows us a tasty way to prepare string beans that is neither too little (blanching) or too much (mushy). As usual, you'll discover clever and time-saving techniques for peeling and chopping along the way. Boil the string beans in salted water for just about 6 minutes so they're still slightly crunchy. Sautee chopped shallot in butter with a splash of oil (Yes, you heard that right, both butter and oil. The oil will prevent the butter from burning). Make sure to cool your string beans before introducing them to the skillet. Sautee and serve.

GREEN BEANS RECIPE
1.5 pounds (675g) green beans trimmed
2.5 teaspoon Kosher salt divided
2 tablespoons (30ml) extra virgin olive oil
½ cup (35g) sliced almonds
1 shallot minced
1 garlic clove minced
½ teaspoon black pepper
grated zest of 1 lemon
2-3 wedges fresh lemon
Bring a large saucepan of water to a boil with 2 teaspoons salt. Add the green beans and cook 2-3 minutes, until they turn bright green. Drain, then immediately rinse under cold running water to stop the cooking. Drain again.
Heat the oil in a large (12-inch) non-stick skillet over medium-high heat. Add the almonds, stirring to coat with the oil. Add the shallot, garlic, pepper, and ½ teaspoon salt. Cook, stirring frequently, until the shallots become softened and the almonds are toasted, about 5 minutes.
Add the green beans to the skillet, using tongs to toss them with almond mixture. Cook for 2-3 minutes, until heated through. Then, transfer the green beans to a serving bowl. Sprinkle with the lemon zest and serve with the lemon wedges.
NOTES
The green beans can be parboiled up to 3 days ahead. Store in the refrigerator until ready to cook.

Green Bean Almondine
1 pound (454 grams) trimmed green beans
2 tablespoon unsalted butter
1/3 cup coarsely chopped almonds
2 tablespoons finely chopped purple onion
2 garlic cloves — minced
2 teaspoons lemon zest
2 teaspoons lemon juice
Salt & Pepper
Bring a large pot of water to a boil. Add salt and mix. Add the green beans. Get a large bowl of ice water ready.
Cook the green beans for about 4 minutes — until still crisp but soft in the middle.
Transfer the blanched green beans into the bowl of ice water.
Melt the butter in a skillet. Add the almonds and toast for about 2 minutes. Work on medium heat and stir the almonds often.
Add the onion and garlic. Cook for about one minute — until you can smell the garlic. Add the green beans and mix well. Cook for about two more minutes.
Add the lemon zest and lemon juice. Season with salt and pepper. Mix well and serve.

Green Beans Almondine Recipe
Instructions:
1 pound fresh green beans ends trimmed off
1/3 cup slivered almonds
tablespoons butter
1 lemon
1 /2 teaspoon salt plus additional salt for cooking beans
Instructions:
Bring a large pot of water to a rapid boil. Season heavily with salt–about 1 tablespoon.
Drop green beans into boiling water and boil for 2-3 minutes, or until just crisp tender.
Remove green beans from pot with a slotted spoon or spider strainer and place immediately into an ice bath.
Preheat a large skillet over medium-low heat. Add in slivered almonds. Shake the pan every 30 seconds. As soon as your nose begins to smell the almonds, or the almonds begin to turn light brown, remove the almonds from the skillet.
Remove green beans from ice bath and gently pat dry.
In the same skillet you toasted almonds in, melt butter over medium heat. Add in green beans and toss to coat.
Give the beans a squeeze of fresh lemon juice and season with 1/2 to 1 teaspoon salt to taste. Saute until warmed through, about 3-5 minutes.
Remove beans from skillet and place in serving dish. Top with toasted almonds.
