VEGAN Lemon Lentil Soup | Protein & Fiber Packed
This easy, lemon lentil soup is the perfect for everyday lunches and dinner. It's low glycemic and filled with protein and fiber. ????????CLICK FOR THE RECIPE????????

INGREDIENTS
1-2 tablespoons olive oil or avocado oil
3 large carrots peeled and sliced
2 stalks celery chopped
1 medium yellow onion diced
4 cloves garlic minced
6 cups vegetable stock
1 1/2 cups red lentils
2 bay leafs
1/2 teaspoon turmeric
1 teaspoon cumin
1/2 teaspoon black pepper
1 teaspoon kosher salt
Juice from 1 lemon (about 5 tbsps)
1 teaspoon lemon zest
Optional: spinach or kale
To top: parsley or cilantro
INSTRUCTIONS
1️⃣ Heat the oil in a large stock pot over medium heat then add the onion, celery and carrots and cook, stirring frequently until the vegetables are soft and the onions are translucent, about 3-4 minutes. Add the minced garlic and cook for another minute, until fragrant.
2️⃣ Pour the vegetable stock over the vegetables, then add the red lentils, bay leaves, turmeric and cumin and stir well. Turn the heat up to medium-high to bring the soup to a boil then reduce the heat to medium-low to simmer. Cover and simmer for 12-15 minutes, until the lentils are soft.
3️⃣ Remove the lid and stir in the lemon juice, lemon zest, salt and pepper.
4️⃣ Transfer 2 cups of soup to a blender and blend on high until smooth then pour it back into the soup and stir to combine. You can also an immersion blender to partially blend the soup to your desired consistency.
5️⃣ Add the spinach, if using, and cook to wilt for 2-3 minutes. Taste and add more salt and pepper as needed. Serve with fresh cracked black pepper, cilantro or parsley.

Today I want to share with you, our number one soup; lentil soup. ???? I have never met anyone who doesn’t like this soup. It was one of the five dishes I loved when I was a child. It is very easy to make, cheap, nutritious and keeps you happy and warm for along time. Plus, with small tricks you can turn this soup into a fulfilling main course with low calories!

Servings: 6-8

Cooking time: 15-20 minutes
2 cups red lentils
8 cups water
1 large onion, roughly chopped
2 tablespoons butter
2 tablespoons flour
1 cup chicken stock
1 heaped teaspoon salt
• Rinse the lentils for about two minutes under cold running water to remove any excess dirt and starch.
• Place the lentils and onion in a medium sized pot and fill with the water.
• Boil for 10-15 minutes until it becomes a thick puree.
• Collect the white foam forming on top while boiling. This foam gives the soup a greyish color and makes it harder to digest.
• To make the meyane (roux), melt the butter in a pan and add the flour.
• Cook for a couple of minutes until it smells like roasted nuts and becomes light brown.
• Pour in the chicken stock into the pan and whisk constantly.
• Add the mixture to the soup and season with the salt.
• Lastly, blend the soup with an immersion blender till the texture becomes creamy and smooth.
Your velvety lentil soup is ready and it is such a good base that you can top with many things and turn the soup into an incredible meal. For the classical one, top with red pepper flakes and squeeze some lemon. In Cyprus, it is really common -and delicious- to add black olives to soup and adding croutons is always a good idea. You can always sprinkle some roasted kadayif instead of croutons. If you want your soup as a main coarse, top with some meatballs, red beans and coriander. Homemade Lentil Soup Recipe
This delicious Lentil soup recipe is jam-packed with spices and caramelized vegetables to bring about an incredibly flavorful soup. This is one of the easiest-to-make most nutritious soups on my website and the taste is beyond amazing.
Lentils are a legume that is indigenous to the Mediterranean and Middle Eastern Countries. They are seeds of a plant that are jam packed with fiber, potassium and protein and make for a great meat replacement.
Since lentils are starchy, earthy in flavor, and can be on the bland side, there are many ways to make them flavorful including by adding them into soup. When other ingredients are introduced that compliment lentils like onions, garlic, spices, and lemon, the taste is out of this world.
There are many variations of lentil soup depending on where you live so do not be surprised if you see different ingredients in it. My version is much more of a Middle Eastern Lebanese style.

Ingredients for this recipe:
• 2 tablespoons olive oil, ghee, or clarified butter
• 2 peeled and medium diced yellow onions
• 2 peeled and medium diced carrots
• 2 peeled and medium diced ribs of celery
• 3 finely minced cloves of garlic
• 1 ½ teaspoons ground cumin
• 1 teaspoon ground coriander
• 3 cups green lentils, rinsed
• 1 large peeled and medium diced potato
• 2 bay leaves
• 9 cups chicken stock
• juice of 1 lemon
• salt and pepper to taste
This Lebanese Lentil Soup is INCREDIBLE
Today we're making an incredible Lebanese lentil soup that is packed full of flavour called Adas bi Hamod. Unlike most lentil soups, this one is not blended and is made with green lentils. It's also filled with Potatoes, Carrots and Swiss chard, giving it an amazing variety of textures. Finally, it's lightly spiced and seasoned with lemon for a delicious and light flavour profile.

300-500g Swiss chard or Spinach (the bigger your leaves are; the more you use, as the stalks are heavy)
200g Green Lentils
80-100ml Lemon Juice
2 Medium Onions
1 Carrot ~100g
1 Potato ~200g
3 Cloves of Garlic
2L Stock or water
2 Tbsp Olive Oil
2 Tsp Salt
1 Tsp Cumin
1/2 Tsp Black pepper

Directions:
1- Dice the onions to a medium small dice
2- Dice the carrot and potato to small chunks
3- Remove the stalks of the chard and cut into small pieces
4- Wash the lentils, and drain
5- Add the olive oil to a pot over medium heat, add the onions and saute until softened
6- Add the potatoes and fry for 2 minutes, then add the lentils, carrots, potatoes and swiss chard stalks (you can also add the leaves here, however this will make them very dark)
7- Cook for 25-30 mins and check for doneness
8- Add the spices, salt and lemon, check for flavour
9- Add the chopped swiss chard leaves and cook for 1-2 minutes until the leaves are softened (you can cook the leaves for much longer, but they will darken and go bitter)
10- Serve immediately
