Som Tam Salad Recipe:
Raw Papaya (julienne) - 1 no
Beans (length-wise) - 4 nos
Carrot (julienne) - 1 no
Bird’s Eye Chilli (slit) - 2 nos
Peanuts (crushed) - 1 tbsp
Dressing:
Brown Sugar - 2 tbsp
Lemon Juice - 2 tbsp
Soya Sauce - 2 tbsp
Garlic (minced) - 3 cloves
Garnish:
Spring Onion (chopped) - 2 Sprigs
Coriander Leaves - 3 Sprigs
Mixed Lettuce - As Needed For Plating
Water - For Blanching
Salt (For Blanching) - ½ tsp
Cooking Instructions:
1. For the dressing, in a bowl combine the brown sugar, lemon juice, soya sauce and minced garlic.
2. For the salad, peel, de-seed, and shred the raw papaya.
3. Blanch in salted water and cut the beans lengthwise. The carrots are to be cut in julienne.
4. Slit the chillies diagonally and crush the peanuts, coarsely.
5. Combine the salad and dressing gently.
6. Place the salad on a bed of mixed lettuce.
7. Garnish with fresh coriander leaves, spring onion and crushed peanuts.
Cooking Tips:
1. Beans must remain crunchy after blanching.
2. Combine the salad and dressing gently to retain the structure of the vegetables.

LAY HO LAY HO! I must warn you up front that this salad is incredibly delicious and extremely addictive. You may be tempted to enjoy this by itself or on a burger or in a taco. Join me in this episode and learn how to make a refreshingly crunchy green papaya salad recipe today!
Ingredients:
1 medium green papaya
25g Thai basil
25g mint
small piece ginger
1 Fuji apple
2 cups cherry tomatoes
2 pieces garlic
2 green chili peppers
1 red chili pepper
1 lime
1/3 cup rice vinegar
2 tbsp maple syrup
2 1/2 tbsp soy sauce
1 cup peanuts
Directions:
1. Peel the green papaya. Hold the papaya in one hand and the knife in the other. Then, very carefully and continuously chop at the papaya making lots of cuts (wear a non-cut glove if possible)
2. Carefully slice down the papaya making rustic looking shreds. Roll around the papaya and repeat until you see the inner seeds peeking through
3. Add the Thai basil and mint to the papaya. Very thinly slice the ginger and apple into matchsticks and add to the salad. Thinly slice the cherry tomatoes and add to the salad
4. Finely chop the garlic and chili peppers. Place them into a bowl along with the juice of 1 lime, rice vinegar, maple syrup, and soy sauce. Mix to combine
5. Pour the dressing onto the salad and mix to combine
6. Heat up a frying pan to medium heat and add in the peanuts. Toast for 4-5min. Then, transfer to a pestle and mortar. Coarsely crush the peanuts
7. Plate the salad and sprinkle some peanuts on top

Papaya Salad recipe, สูตรส้มตำ, authentic Thai food
While papaya salad is a signature dish in Cambodia, Laos, and Vietnam, it’s the Thai version that is the most famous. However, food historians believe that this dish originated in Laos.
This is because papaya salad is especially popular in Thailand’s northeastern region of Isaan, which shares a border with Laos. What’s more, papaya and chili have been key ingredients in Laotian cuisine since the 1800s. Although the Thai green papaya salad we all know and love is a little different from the papaya salad, they serve in Laos, which often includes green eggplant and fermented fish paste.
In the Lao-Isaan dialect, Som Tum salad was originally called tum bak hoong. The ‘bak hoong’ part translates to mean ‘papaya’ while ‘tam’ means ‘pounded’. Since making green papaya salad involves a lot of pestle and mortar action, it makes sense that it was once known as ‘pounded papaya’.
The name change came as a result of mass migration from the Isaan region to Bangkok. Migrant workers shared their love of the papaya salad they grew up eating, with both the recipe and the name changing over time for Som Tum to become the street market staple it is today. Although, the ‘pounded’ part of the dish’s name has remained, as Som Tum translates as ‘pounded sour.’
When you think of Thai food, Som Tum is one of the first dishes that comes to mind. As such, it comes as a real surprise to learn that this dish didn’t even originate in Thailand, but rather in Thailand’s neighboring country of Laos!
Of course, this doesn’t make Som Tum any less of a star in Thai cuisine, where they’ve perfected the art of getting that balance of sweet, sour, salty, and spicy just right.
