GRILLED CHICKEN BREAST RECIPE
2 chicken breasts
1 tablespoon avocado oil
salt and pepper to taste
1/4 cup bbq sauce, optional
Instructions
Prepare the grill. Clean the grates and set to a medium high heat. You want the temperature somewhere between 400-450 Farenheit.
Place chicken breast between two pieces of wax paper and pound with a meat mallet until the chicken has a uniform thickness all around. This will help the chicken to cook more evenly.
Brush both side of the chicken with avocado oil.
Season generously with salt and pepper. Be sure to get both sides.
Place the chicken smooth side down on the grill and close the lid. Cook for three minutes and then rotate the chicken 90 degrees for an additional minute (this will create cross-hatch grill marks).
Flip the chicken and cook for an additional three or four minutes. If you want to brush some bbq sauce on the chicken, so that now.
Flip the chicken one last time to add additional bbq sauce if desired.
Serve and enjoy!
NOTES
Don’t have a meat mallet? No problem. You can use a heavy bottle, a rolling pin or even a can of soup.
You can use any type of sauce or marinade you prefer. It’s an easy way to add extra flavor without marinading the chicken.
This chicken is also delicious plain, no sauce needed. I love making it plain and keeping it on hand for salads, sandwiches, wraps, quesadillas, etc.

Garlic Grilled chicken, Greek Style!
Simple to make, garlic grilled chicken recipe. This one is Greek style with lemon, herbs and garlic served with a yogurt dip. If you have time, marinade it overnight, otherwise 2 hours is fine. A perfect recipe for entertaining whether inside or outside for a tasty BBQ. If inside, make sure you heat up that griddle pan so you get plenty of smoky char flavour. For the dip, you can leave out the cayenne pepper if you don’t like spicy but it’s awesome spicy! Use a good quality full fat Greek natural yogurt and fresh dill for that beautiful flavour. Grilled Chicken Breast – Chicken Breast Stuffed and Grilled on Big Green Egg
Grilled Chicken Breast Stuffed with Spinach, Cheese and Sun Dried Tomatoes cooked on Big Green Egg

This grilled recipe is an easy one for Stuffed Grilled Chicken Breasts.
I start with a chicken breasts and use a pocket. Then I place in sun dried tomatoes, wilted spinach and thick-sliced mozzarella cheese. Top it with Killer Hog's AP Seasoning and secure with skewers.
For seasoning on the outside of the grilled chicken breasts, I used Killer Hogs AP Seasoning and then Killer Hogs The BBQ Rub.
For this cook I used my Big Green Egg - and created a two-zone fire with all my hot coals on one side and a void on the other. I placed my grilled chicken breasts on the cool side of the grate and allowed them to cook for 20-30 minutes.
Once the grilled chicken breast reaches 135 internal, it's time to move them to the hot side directly over the coals. I set my timer for 4 minutes and flip the chicken breast over until they reach 165 internal.
When the stuffed grilled chicken breast is ready, remove it and allow it to cool for 5-10 minutes. Just remember to remove the skewers before you dive in!
