How To make Grilled Beef Tenderloin w/ Chipotle Sauce & Asadero Cheese
12 ounces Cacique brand Asadero cheese
6 8 oz. beef tenderloin steaks
3 tablespoons butter
Chopped cilantro for garnish
optional ***Chipotle Sauce*** 15 Roma tomatoes
3 medium onions :
sliced 1/2" thick
3 tablespoons garlic minced
2 teaspoons dried oregano
2 cups cilantro :
chopped
3 limes juice of
5 Chipotle chilies in adob :
canned
salt and pepper -- to taste
Prepare the Chipotle Sauce in advance. On a BBQ, grill the tenderloins over a w hite ash fire, to desired doneness (for best results the BBQ should be covered or closed, to act as an oven). Heat the sauce through and whisk in the butter. Place a slice of Asadero cheese over each tenderloin and allow to melt. Place m eat on serving tray and pour sauce over the top of the meat. Sprinkle with Coti ja, and garnish with the cilantro.
Chipotle Sauce Toss the tomatoes in vegetable oil and preferably grill the onions and the toma toes, over Mesquite coals. The tomatoes should have charred skins (if not grill ing, char tomatoes skins in a very hot skillet and then add the onions with som e vegetable oil to a hot sauce pan) Add garlic and continue to cook for about 2 mins. Add the oregano, cilantro, and the chilies, which have been rinsed and c leaned of their veins, and seeds and cook slowly, covered, for about 20 minutes . Let cool and then puree in the blender, adding the lime juice and salt and pe pper to taste. For spicier sauce, add some of the adobo from the canned chilies .

2.5-3lb chuck roast
Pat dry and apply a thin layer of @sauce hotter sauce as your binder then season with @spanglishasadero al pastor rub.
Smoke at 225 until you get an internal temp of 165 to 170
Place in a foil pan and add 1/2 cup of beer, 1 cup beef broth, 1 white onion sliced, 1/4 cup Worcestershire sauce and seal with foil. Place back on your smoker at 275 until the meat in tender at about 205-215 internal temp. When a meat thermometer probe slides in without any resistance, it’s done. Rest for 20 minutes before shredding.
Prep your corn tortillas by frying in hot oil for less than a minute. You’re not cooking them. The hot oil makes them easier to fill and roll. Fill your tortilla s with shredded beef and roll. You can use a toothpick to keep them together. Deep fry at 350 until golden about 5 minutes.
Top with guac, shredded lettuce, salsa, Mexican Crema and cotija. Enjoy!!!

The beef was outstanding quality, but I would say that you absolutely need to order medium rare. One of the burgers I ordered was medium, but the medium rare was the best.

2. Wahlburgers ( - Next up on the burger tour in Las Vegas we’re going to Wahlburgers, started by Mark Whalberg and his brothers. I was pretty impressed with the burger, the meat was tasty, the toppings were generous, and it was everything you want in a classic picture perfect cheeseburger.

3. Guy Fieri's Vegas Kitchen ( - Finally to complete this insane burger tour in Las Vegas, we went to Guy Fieri's Vegas Kitchen to eat the giant Bacon Mac ‘N’ Cheese Burger which has won numerous awards in Las Vegas. There’s no doubt it’s huge, and a lot of fun to eat!

Season the corned beef, smoke on the pit, and a few hours later, Cheats Pastrami❤️????
Ingredients:
1 Corned Beef
Mustard
Seasoning (I used @spanglishasadero Chile De Arbol)
Method:
Dial the smoker in at 275°F and add a couple chunks of your favourite smoking rub wood.
Remove the corned beef from its packaging and remove any silver skin. I left a little fat cap behind.
Pat the beef down with paper towels then lather in mustard. Season liberally pressing the rub into the meat, then leave for 15-20 minutes for the rub to adhere.
Insert a thermometer then pop onto the pit. After the first hour, spritz the beef with a 50/50 mix of water and Worcester sauce. Keep doing this every 30-40 minutes as needed. Smoke the beef until the internal temp hits 200°F. Rest for 30 mins before slicing ????

THINGS YOU’LL NEED:
1 small tomato chopped
1 jalapeno pepper chopped
1 tablespoon chopped cilantro
1 lime
6 ounces Mexican chorizo
1 small white onion chopped
2 cloves garlic chopped
1 large poblano pepper roasted and diced (roasting instructions below)
10 ounces Mexican cheese blend – Use any melty cheeses like Asadero Chihuahua, even cheddar or Monterrey Jack work great
Salt and pepper to taste
Tortilla chips, extra lime
