INGREDIENTS
2 lbs thinly sliced sirloin tip steaks
1 yellow onion (sliced into strips)
1 green bell pepper (sliced into strips)
1 red bell pepper (sliced into strips)
2 cups colby jack cheese (shredded)
FOR THE MARINADE
½ cup fresh lime juice (about 4 limes)
¼ cup olive oil
6 cloves garlic (finely diced)
2 teaspoons salt
2 teaspoons chili powder
1 teaspoon cumin
1 teaspoon black pepper
½ teaspoon cayenne pepper
INSTRUCTIONS
Marinade the steak. Combine all of the ingredients for the marinade in a large zip top bag or other container. Add the steak to the marinade and stir well to be sure the marinade in covering all of the slices. Allow the steak to marinate in the refrigerator for at least 2 hours or up to 4.
Grill the vegetables. Preheat your grill to medium high heat (about 400 degrees F). Place the onions and peppers in a grill basket and grill for 5-6 minutes, or until the edges of the onions are starting to brown and the peppers begin to soften.
Assemble the roll ups. While the vegetables are grilling, remove the steak from the marinade and shake off any excess. Lay the steaks flat on a large work surface and top each with about 1/3 cup of the shredded cheese. Remove the vegetables from the grill (leave the grill on) and divide evenly among each of the roll ups. Roll each steak around the cheese and vegetables and secure each roll with a toothpick.
Grill the Roll Ups. Place each steak roll on the grill, seam side down, and grill for 3-4 minutes per side (about 12-15 minutes total.
Rest and serve. Remove from the grill and allow the steak rolls to rest for 4-5 minutes before serving with your favorite fajita toppings and sides.

Steak Fajitas
1-2 Lb Skirt Steak
1 Green Bell Pepper (thinly sliced)
1 Yellow Bell Pepper (thinly sliced)
1 Red Bell Pepper (thinly sliced)
2 Medium Onions (thinly sliced)
2 Roma Tomatoes (diced into 1 inch pieces)
1/2 Shallot (minced)
2 Garlic Cloves
2 Tbsp Chili Powder
1 tsp Cumin Powder
1 Tbsp Paprika
1/2 Tbsp Oregano
Avocado Oil
Limes
Salt and Pepper
Accoutrements:
Flour or Corn Tortillas
Shredded Lettuce
Guacamole
Sour Cream
Cilantro
Cotija Cheese
Lime Wedges
Instructions:
In a large bowl add the skirt steak, 2 Tbsp of avocado oil, 1/2 of the minced garlic, minced shallot, 1 Tbsp of chili powder, 1/2 tsp of cumin, oregano, paprika, the juice of 1/2 a lime, salt and pepper. Marinade the steak for 1-2 hours or up to overnight.
In a large cast iron skillet on medium high heat, add 1-2 Tbsp of avocado oil. Sear and cook the steak for 1-2 minutes a side or until the internal temperature is 130 degrees Fahrenheit. Let the steak rest for 10 minutes then slice thin against the grain.
While the steak rests, in the same cast iron pan add the onions, a pinch of salt, and more avocado oil if needed. Caramelize the onions slightly then add the bell peppers. Sauté until softened then add the tomatoes and remaining garlic. Once the garlic is fragrant (about 1 minute) add the remaining chili powder and cumin. Season to taste with salt and pepper then add the steak back to the pan. Toss together and once the veggies are cooked to your liking, serve hot with the assortment of accoutrements.

Grilled Margarita Steak Fajitas Recipe ~ Noreen's Kitchen
Greetings! Today we are grilling some amazing Margarita steak fajitas! You know you want some! These were amazing and they are the perfect quick throw on the grill meal.
You will want to think about these in advance and have the meat marinating and waiting for you to toss on the grill so that all this amazing flavor. Mix up the marinade and toss the meat and the sauce in a zip top bag and put it in the fridge for at least four hours but overnight would be even better.
Grill this on indirect heat over coals or gas to your desired doneness. Then allow the meat to rest for 10 minutes before slicing thin and serving!
Go crazy with your accompaniments. We love homemade guacamole, some sour cream and cheese along with warm Cesaro tortillas, salsa or pico de gallo and fire roasted veggies that went on the grill after the meat was done. We use a grill tray to cook the veggies so they don't fall through the grate.

3 pounds chicken thighs
1/2 cup yogurt
5 garlic cloves minced
1 tbsp coriander powder
1 tbsp cumin powder
1 tsp cardamom powder
2 tsp ground fenugreek
1 tbsp white vinegar
1 tbsp red chili powder
1 tbsp onion powder
1 tbsp smoked paprika
Juice of 1 lemon 2 tbsp
1/4 cup olive oil
2 tsp salt
2 tsp black pepper
Garlic Basil Chicken Marinade:
2 lbs chicken breast
5-7 cloves of peeled garlic chopped
1/2 tsp kosher salt with the garlic
10 sprigs of fresh thyme stripped (optional)
2 oz fresh basil picked from the stem
1 tsp chili flakes
1/3 cup extra virgin olive oil
Fresh lemon and Maldon salt to finish (After Cooking)
