How To make Grilled Gingered Swordfish
6 ea Swordfish steaks,1"thick
3/8 c Dry sherry
1 1/2 ea Garlic clove,mince
2 1/4 ts Ginger,mince
1 1/2 ts Lemon zest,grated
1 c Soy sauce
1 1/2 ea Carrot,small,minced
1 1/2 tb Red bell pepper,nince
3 ea Scallions,small,chop fine
3 tb Extra virgin olive oil
1) Place fish in glass dish. 2) Combine soy
sauce,sherry,carrot,garlic,red pepper,ginger,scallions & lemon zest.Pour over fish.Cover & set aside 1hr at room temperature.Remove fish from marinade & pat dry,& brush w/oil. 3) Light grill or broiler.Brush grill rack or broiler pan w/vegetable oil & cook fish steaks,4" from heat,turning once & basting occasionally w/remain- marinade until the fish is opaque throughout,4-5min @ side.

Here's a Marinated Swordfish Recipe
1 to 2 lbs. of Swordfish
1 T Onion
1 T Scallions
1 T parsley
1 Clove roasted Garlic
1 tsp Ground Ginger
1/2 T Spicy Brown Mustard
1 T Kosher Salt
1 tsp Sesame oil
1/2 Soy Sauce
1 C olive oil
Black pepper as needed
Optional: Texas Pete Pepper Sauce or Tabasco just a few drops

Welcome to Great Chefs of the Caribbean, featuring the New World cuisine from some of the Islands finest chefs. When the select and well healed guests come to Necker Island they enjoy the food of Scott Williams, a native of England. He began his training in London then worked in several restaurants in and around the city. His entree is a straight-forward grilled Swordfish with a Soy-Ginger Beurre Blanc.

Ginger-Garlic Pan Roasted Swordfish - Around the Kitchen Table
Join +Susan Serra and me for this weeks edition of *Around the Kitchen Table* when I will be preparing *Ginger-Garlic Pan Roasted Swordfish*
*Ingredients*
2 tablespoons butter, room temperature
2 teaspoons chopped fresh parsley
1 clove garlic - minced
1/2 teaspoon grated ginger
1/8 teaspoon crushed red pepper
1/2 teaspoon grated lemon peel
1 tablespoon olive oil
2 1-inch-thick swordfish fillets ( 6-7 ounces each)
*Instructions*
Preheat oven to 400°F.
Blend together butter, parsley, garlic, ginger, red pepper and lemon peel in small bowl.
Season to taste with sea salt.
Heat oil in heavy large ovenproof skillet over medium-high heat.
Sprinkle swordfish with sea salt .
Add swordfish to skillet. Cook until browned, about 3 minutes.
Turn swordfish over and transfer to oven. Roast until just cooked through, about 10 minutes longer.
Add seasoned butter to same skillet. Cook over medium-high heat, scraping up all the bits, until melted and bubbling.
Transfer swordfish to platter
Pour butter sauce over swordfish and serve with your favorite sides
