How To make Grilled Lemon And Gin Marinated Chicken
1/4 cup fresh lemon juice
1 teaspoon lemon rind
1/4 cup gin
2 teaspoons chopped fresh oregano or 1/2 teaspoon
-- dried oregano salt and freshly ground black pepper 1 teaspoon sugar
1/4 cup vegetable oil
4 whole skinless boneless chicken breasts
In a shallow dish whisk together the lemon juice, the gin, the oregano, the salt, the sugar and pepper to taste, add the oil in a stream, whisking, and whisk the marinade until it is emulsified. Add the chicken, coating it well with the marinade, and let it marinate, covered and chilled, for 20 minutes. Grill the chicken, reserving the marinade, on an oiled rack set about 6 inches over glowing coals for 7 minutes on each side, or until it is cooked through.

Marinade:
1 lb chicken breast
2 tsp cooking wine (Shaoxing or Mirin)
2 tsp dark soy sauce
2 tsp light soy sauce
2 tsp potato starch
In the pan:
3 tbsp cooking oil
1 tbsp dark soy sauce
1 tbsp light soy sauce
1 tbsp oyster sauce
2 spring onions sliced
3 Fresno chilis sliced

How to make a Gin & Tonic grilled Chicken:
Spatchcock the chicken by removing the spine with a scissor. Pour 16 cl of high quality gin into a container and add a liter of tonic water & a liter of cold water. Add some juniper berries, black pepper, lemon and cucumber slices, 75 g of salt and 120 g of sugar, whisk well and brine the chicken for 45 min to 1 hour.
Preheat your grill for 180°C / 356°F and grill the chicken after brining for approximately 35-40 min. or until desired core temperature is reached.
