How To make Grilled Ribeye Steak with Guinness Marinade
1 each Ribeye steak (12 ounce)
2 each garlic cloves
1 teaspoon shallots
1 tablespoon Vidalia onion
1/4 teaspoon Tarragon
fresh
1/4 teaspoon parsley
1 teaspoon Worcestershire sauce
1 teaspoon Dijon mustard
4 ounces Guinness Stout Beer :
room temperature
1 ounce Tamari soy sauce
1/8 teaspoon black pepper -- coarse grind
1/8 teaspoon salt
Finely chop gralic, shallot and onion and place in a small bowl. Finely chop parsley and tarragon and add to the bowl. Add the Worcestershire sauce, Dijon mustard, Guinness beer, Tamari and seasonings then mix well to combine. Let stand for 30 minutes to blend flavors.
Place the ribeye in the marinade and make sure it is well coated. Cover the bowl and place in the refrigerator for 30 minutes or overnight if being used for a picnic entree the following day.
Pre-heat the grill and then cook the ribeye.
Place the remaining marinade in a small saucepan on the grill and reduce it for one or two minutes until slightly thickened. Add more beer to the marinade at this stage if desired. Pour over the ribeye and serve.
** This marinade recipe is enough for one steak. Multiply as necessary.

Grilled Ribeye
Sometimes I just love a simple charcoal grilled steak. This is was absolutely delicious and as much as I love a butter basted steak the delicious flavor of charcoal grilled steaks is unbeatable.

Recipe - Guinness-Marinated Bison Steak Sandwiches
INGREDIENTS:
●1 cup Guinness beer, or other stout
●1/2 cup finely chopped sweet onion
●1/3 cup reduced-sodium soy sauce
●2 tablespoons molasses, (not blackstrap)
●1 tablespoon chopped fresh rosemary, or 1 teaspoon dried
●1 tablespoon minced garlic
●1/4 teaspoon Worcestershire sauce
●1 pound boneless bison rib-eye steaks,
●1 1/2-2 inches thick (see Tip)
●24 cremini mushrooms, stems removed
●1 large red onion, cut into 1/4-inch-thick slices
●2 tablespoons extra-virgin olive oil
●1/2 teaspoon kosher salt
●Freshly ground pepper, to taste
●4 slices rye bread,
●1/2-3/4 inch thick
Cooking a Steak over my Aluminum Foundry (with Guinness Mushroom Sauce)

To celebrate reaching 50K subscribers, I thought I'd make a steak over my foundry. Of course I also cast an aluminum commemorative plaque at the same time! If you want to see all of the process for the plaque (CNC pattern making, casting, finishing) you can go here!

1 lb Ribeye Steak
14.9 oz Can of Guinness
16 oz of Whole White Mushrooms, Sliced
1 Medium Yellow Onion, Chopped
2 Large Cloves of Garlic, Minced
8 Tbsp of Unsalted Butter
1 Tbsp of Dark Brown Sugar
1 Tbsp of Balsamic Vinegar
Olive Oil
Montreal Steak Seasoning
Salt and Pepper
For the Steak
Remove steak from the refrigerator and marinate in low sodium soy sauce for at least an hour until steak reaches room temperature. Pat steak dry with a paper towel and apply Montreal steak seasoning to all sides.
Add just enough olive oil to coat a medium cast iron skillet. Apply pan to heat. When oil begins to smoke, place steak in pan for ~3 minutes. Then flip the steak and leave for ~3 minutes. Add 4 tbsp of unsalted butter to the pan and spoon over the steak until nicely browned. Remove steak from heat and allow to rest while you make the sauce.
For the Sauce
In a medium pan, melt 4 tbsp of butter. Add the chopped onion and cook until transparent. Stir the minced garlic into the onions and then add the mushrooms. Continue cooking the mushrooms until they are soft and begin to brown. Add the can of Guinness, dark brown sugar and balsamic vinegar and reduce by half. Salt and pepper to taste.
Drizzle Guinness, mushroom sauce over the steak and serve. Sauce is enough for 1 to 3 steaks depending on how much you like mushrooms. :)
