How To make Grilled Skirt Steak
1 t Dry Mustard
1 t Ground Cumin
1 Bay Leaf
Crumbled With The
Main Rib Removed 1 lg Clove Garlic :
Minced
1 c Well Seasoned Beef Broth
Heated To Boiling 1/4 c Worcestershire Sauce
1 tb Cider Vinegar
1 tb Vegetable Oil
1 t Hot Pepper Sauce
2 Skirt Steaks -- About 12 Oz Ea
In a small bowl or 2-cup measure, blend the mustard, cumin, bay leaf, and garlic. Add the boiling broth and blend well, mashing any lumps of mustard against the sides of the bowl or cup. Stir in the Worcestershire sauce, vinegar, oil and pepper sauce. Cover and let cool. Place the steaks in a plastic bag or shallow dish, add the marinade, turn and let marinate 2 to 3 hours at room temperature, turning 2 or 3 times. Remove the meat from the marinade and grill 4 to 5-inches above hot coals until well browned, 6 to 8 minutes; turn and brown the other side for 6 to 8 minutes. Brush with the marinade and serve at once. NOTE: Any leftover marinade can be frozen and re-used.

Ingredients
1 1-2 pound skirt steak
Chipotle Seasoning
1 Tablespoon brown sugar
1 teaspoon black pepper
1 teaspoon salt
1 teaspoon chili powder
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon ground chipotle chilis
1/4 teaspoon ground cayenne pepper optional for added heat
Instructions
1. Preheat your grill to High heat (400-450 degrees F) for direct grilling.
2. Trim any excess fat or silver skin left on the skirt steak (the stuff that runs in between the muscle is fine).
3. Season liberally with the chipotle seasoning, using your fingers to press the rub into the meat.
4. Place the steak on the grill grates directly over the heat and grill for 3-4 minutes per side. Stay close and monitor until the internal temperature reaches 125-135 degrees F. You won't have much carryover with this, so take it off right when you hit the correct temp.
5. Remove the steak when it has reached your desired doneness. Rest for 10 minutes.
6. Slice per instructions in post. Enjoy with your family and friends, and revel in the joy of being a BBQ hero.

Grilled skirt steak with chimichurri sauce is arguably the best easy dinner recipe during summer! The steak is meltingly tender, topped with savory herbaceous goodness, and made in under 30 minutes.
Steak served with chimichurri (also known as churrasco) is one of my favorite Latin American dishes. You'll probably see it on fancy dinner menus, but honestly, this homemade version is just as good. Especially with this fresh, homemade chimichurri sauce. And for an authentic chimichurri sauce, you definitely need to chop all ingredients by hand (this is how they do it in Argentina and Uruguay).
This budget-friendly steak recipe is perfect for family dinners and entertaining. Hope you enjoy it as well!
