Asian Grilled Tuna Salad
Sweet and savory flavors combine in this delicious tuna-topped salad from Chef Billy Parisi!
Our fresh tuna is a steak-like fish with a mild and sweet flavor, which makes it perfect on top of an Asian-inspired salad with sesame ginger or ginger mandarin dressing.
Asian Grilled Tuna Salad
Serves: 4
Ingredients
1 Tbsp. oil, plus 2 tsp.
12 oz. fresh tuna steak
2 peaches, pitted and sliced in half
6 cups packed spring mix
½ cup shredded carrots
½ cucumber, thinly sliced
2 radishes, sliced
½ cup baby bell peppers, sliced
½ cup sugar snap peas, sliced
2 Tbsp. green onions, sliced
Chopped fresh mint and cilantro, for garnish
Salt and pepper, to taste
Stonewall Kitchen sesame ginger dressing or Brianna’s ginger mandarin dressing
Instructions
1. Preheat the grill to high heat.
2. Coat the tuna on both sides in 1 Tbsp. of oil and season with salt and pepper.
3. Coat the peaches in 2 tsp. of oil and take them to the grill along with the tuna.
4. Cook the tuna for 1-2 minutes per side for a rare to medium-rare internal temperature.
5. While cooking the tuna, place the peaches on the grill cut-side-down and cook for 3-4 minutes, or until grill marks have formed.
6. Add the spring mix to a large bowl and layer with carrots, cucumbers, radishes, peppers, snap peas, green onions, herbs and tuna. Serve alongside either dressing recommendation.

In the kitchen: Honey mint vinaigrette
Chef Anthony Ploof joins me now from the Tennessean hotel to make honey mint vinaigrette... which will be in one of the hotel's Valentine's Day special dishes.
Honey Mint Vinaigrette
Makes 2 cups
4 tablespoons lemon juice
4 tablespoons cider vinegar
2 tablespoons honey
1 tablespoon mint, chopped
2 tablespoon shallot, minced
Pinch of salt
Pinch of pepper
1.5 cups extra virgin olive oil
1. In medium mixing bowl, whisk together lemon juice, vinegar, honey, mint and shallot.
2. Slowly drizzle in olive oil while whisking vigorously, creating an emulsification.
3. Season with salt and pepper to taste.

How to make Lemon Butter Sauce
Yield 3oz of sauce
Ingredients:
3 Tablespoons lemon juice
7 Tablespoons Salted butter
1 Tablespoon chopped parsley
Salt and Pepper to taste
Sugar to taste (if sauce is too acidic)
