Ingredients:
1 cup (16TBsp) 225g butter
2TBsp (45g) honey
2/3 cup (100g) brown sugar
zest of lemon
zest of orange
vanilla
spices
1tsp baking powder
1 2/3 cup (230g) flour
3 eggs
3/4 cup (100g) any nuts
3 cups (560g) dry fruits

Old Fashioned Gumdrop Cake
Not everyone likes fruitcake but I have the perfect solution. This cake is different and delicious with an old charm of a fruitcake. After some research I found that this cake dates back to the early 1900's. Eaten with a cup of coffee or some creamy eggnog makes a fabulous Christmas treat. The cake tastes similar to a spice or applesauce cake. The gumdrops give a sweet chewy bite and the crunch of the nuts add a bit of texture. Definitely going to be making this again! I think this cake would also make a great gift!
Gumdrop Cake
Ingredients
2 cups gumdrops
1 cup shortening
1 cup sugar
2 eggs
1 1/2 cups unsweetened applesauce
1 tsp cinnamon
1/2 tsp cloves
1 tsp salt
1 tsp baking soda
1 Tbsp hot water
1 cup light or dark raisins
1 cup chopped nuts
4 cups flour
Instructions
1. Preheat oven to 300 degrees. Dissolve baking soda in 1Tbsp hot water.
2. Cream butter and sugar in a large mixing bowl.
3. Add applesauce, dissolved baking soda and eggs.
4. Add 3 cups flour, cinnamon, cloves, and salt.
5. Mix nuts, raisins, and gumdrops in a separate bowl and sift remaining 1 cup of flour over mixture, stirring making sure everything is coated. Add to creamed mixture.
6. Grease and flour a tube pan or bundt pan. Pour batter into pan and bake 2 hours.
Tip: I baked this cake for 1 hour and 50 minutes, you will want to check after 1 and half hours because some ovens cook differently.
If I make again I think I would increase the applesauce to 2 cups. The cake was a little dry.

Gumdrop Cookies
Soft, chewy Gumdrop Cookies! My Grandma's recipe is loaded with gumdrops, coconut & oatmeal. These cookies are sweet, delicious and an old-fashioned cookie that everyone loves!
Ingredients
▢ 1 cup brown sugar
▢ 1 cup white sugar
▢ 1 cup butter softened
▢ 2 large eggs
▢ 2 cups all purpose flour
▢ 2 cups oatmeal
▢ 1 cup coconut shredded
▢ 1 cup gum drops plus more to top the cookies with if desired!
▢ 1 teaspoon vanilla extract
▢ 1 teaspoon baking soda
▢ 1 teaspoon baking powder
▢ ¼ teaspoon salt
Instructions
1. Preheat the oven to 375 degrees.
2. In a large bowl, sift together the flour, salt, baking powder and baking soda, set aside.
3. In a separate bowl, cream butter, eggs, white sugar, brown sugar and vanilla.
4. Using a mixer, slowly incorporate the flour mixture in a couple of batches into the creamed mixture until completely mixed.
5. Stir in the coconut, oatmeal and gumdrops.
6. Drop dough onto un-greased cookie sheet.
Remove from oven, allow to rest on baking sheet for five minutes before removing and placing on wire rack.

Today’s recipe was very kindly given to me by Mrs Beaton, so a very special thank you to her and her daughter, my friend, Trina.
List of ingredients:
1 1/2 cup of butter
250gr of cream cheese
3 cups of whte sugar
3 cups of flour (save 1/2 cup for the gum drops)
6 eggs
1-2 tsp of vanilla extract
2 tbsp of baking powder
2 cups of foured gum drops
Method:
Butter and flour the cake pan you are using.
Pre heat oven to 180/375 degrees
Cream butter + cream cheese + sugar.
add the vanilla.
add eggs one at a time, mixing well after each egg.
Gradually add the flour to the cake, don't forget to use half of cup for the gum drops).
Add the baking powder and mix.
Finally add the floured, diced gum drops.
And now pour it into your cake tin.
Note: Don't forget to follow the tips I give in the video.

Orange Gumdrop loaf /Cake
1/3 pound or 150 g orange gum drops cut into pieces
3/4 cup or 175 mL of Petit chopped dates
1/2 cup or 125 mL butter or hard margarine, softened
3/4 cup or 175 mL granulated sugar
2 large eggs
1 3/4 cup or 425 mL all purpose flour
2/3 cup or 150 mL fine coconut
1/2 teaspoon or 2 mL of baking soda
1/4 teaspoon or 1 mL salt
1/2 cup or 125 mL prepared orange juice Grated peeling of 1 orange (optional)
mix first three ingredients together in a small bowl. Set aside.
Beat butter and sugar together in a large bowl. Beat in eggs one at a time and add your grated orange peel, if using.
Stir next five ingredients together in a separate bowl. Add egg mixture and stir. Stir in orange juice and fruit mixture. Pour into greased 9 x 5 x 13“ or 23 cm x 12 cm x 7 cm loaf pan.
Bake at 350°F or 175°C oven for about 65 to 75 minutes until and insert it wooden toothpick comes out clean from the center.
Cool on rack. Remove from pan. Wrapped in plastic or foil. Freeze up to two months or store refrigerator for 2 to 3 weeks. Makes one loaf. This is from a Canadian cookbook called companies coming. The only change I made to the recipe was adding the grated orange peel.
