Eyeball Gummy Recipe (featured in my Halloween cookbook, Spooky Food! linked belowwww)
Ingredients (makes roughly 48 1-inch eyeballs)
Iris and Pupils:
2 tbsp powdered gelatin
¼ cup + 1 tbsp water
¾ cup cream soda, or any clear soda
vanilla extract
black, brown, green, blue and red food coloring
The white of the eye:
1 cup water
½ cup powdered gelatin
1 cup condensed milk
¼ cup sugar
vanilla extract
Directions
Make the iris and pupils:
1. Combine the gelatin and water in a microwave-safe cup. Heat for 20-30 seconds, until liquid.
2. Pour the cream soda, gelatin mixture and 1 drop of vanilla extract into a small pot and set to medium heat. Heat until the gelatin has fully dissolved. Remove the pot from the heat.
3. Use a spoon to remove any foam that has accumulated on the surface and discard. Pour ¼ cup of the gelatin mixture into a small bowl. Dye it black with a couple drops of black food coloring.
4. Use a small spoon to drop 2-3 drops of black jelly into each space of a 1-inch sphere ice cube mold. Allow the pupils to set a room temperature while you make the iris.
5. Divide the remaining jelly into 4 bowls and dye it brown, green, blue and red. Use a small spoon to pour just enough iris jelly on top of the pupils so that you can see a ring of color around the pupil.
6. Leave the jelly to set at room temperature for 1-2 hours before making the white of the eye.
Make the white of the eye:
1. Place the water and gelatin into a microwave-safe bowl. Microwave for 20 second intervals until liquid. Keep an eye on the microwave, as the gelatin can bubble and create quite a mess in the microwave!
2. Pour the condensed milk, sugar, a drop of vanilla extract and the gelatin mixture into a small pot and set it to medium heat. Mix until the gelatin has dissolved and everything is fully incorporated.
3. Use a spoon to remove any foam that has accumulated on the surface and discard.
4. Pour the mixture into the mold and place the lid on top. Place the mold in the fridge overnight, or until the gummy mixture has fully set.
5. Gently unmold the eyes and enjoy!
