How To make Ham's Piquant Barbecue Sauce
2 md Onions, chopped
Olive oil 1 Green bell pepper, chopped
2 Beef tomatoes, chopped
2 t Allspice
2 t Mustard
4 t Extra hot chile powder
1 t Cumin
1 T Capers, chopped
1 Glass red wine
DIRECTIONS:
4 Cloves Garlic, chopped
1 Red bell pepper, Chopped
12 oz Tomatoes, chopped
1 Sml can concentrated tomato
-paste 1 t Ginger
2 t Mild paprika
2 t Oregano
2 t Olive paste
1 T Soy sauce
Black pepper Sweat the onions and garlic in a saucepan with the olive oil, taking care not to brown (a pot with close fitting lid helps), add the sweet peppers cook a little longer, add the tomato, cook a little more, then chuck everything in and cook for another 45 minutes. Liquidize. That's it.

How to Make Your Own Smokey BBQ Sauce
Making your own BBQ Sauce is easier than you might think. Its Smokey, and sweet with just a little bit of spiciness. Many of the ingredients are likely already in your kitchen. This recipe will make approx. 1 1/2 cups of smokey bbq sauce.
For this recipe I used:
3 cups Ketchup
1 Chipotle Pepper and a tablespoon adobo sauce
1 cup packed dark brown sugar
¾ cup distilled white vinegar
¼ cup apple cider vinegar
3 tablespoons Worcestershire sauce
¼ cup molasses
1 tablespoon Chili Powder
½ teaspoon kosher salt
2 teaspoons ground cumin
1 tablespoon smoked paprika
1 tablespoon sweet paprika
2 teaspoons onion powder
2 teaspoons garlic powder
1½ teaspoons freshly ground black pepper
3/4 cup water

Ingredients:
4 quarts (1 gallon) water
¾ cup coarse salt (sea or kosher)
¾ cup packed light brown sugar
1 tablespoon pink curing salt (Prague Powder No. 1 or Insta Cure No. 1)
5 whole cloves
5 allspice berries, lightly crushed with the side of a chef’s knife or cleaver
2 bay leaves, broken into pieces
2 cinnamon sticks (3 inches each), broken into pieces
1 tablespoon whole black peppercorns
6 turkey drumsticks (1 to 1½ pounds each)
