3 lg Potatoes, peeled, grated, Well drained (about 3 cups) 1 c Chopped cooked ham 1/3 c Chopped chives or green Onions 1/4 c Chopped fresh parlsey 1 Egg 2 tb All purpose flour 3 tb Vegetable oil Combine first 6 ingredients in medium bowl. Season with salt and pepper. Heat 3 tablespoons oil in heavy large skillet over medium heat. Using 1/4 cup batter for each pancake, fry batter in batches until cooked through and golden brown, adding more oil if necessary, about 3 minutes per side. Transfer pancakes to paper-towel-lined baking sheet to drain briefly. SOURCE: BON APPETIT, January '93

Ham and Cheese Potato Pancakes Recipe | Episode 410
So I have unofficially been doing a series on pancakes so who am I to break my own little series here right? These are not your typical pancakes but they are some of my favorite. I have a weakness for something just a little different when it comes to trying food. The Ham and Cheese Potato Pancakes are so good. They are a nice hearty breakfast that takes a lot of what your used to eating with breakfast just in a bit of a different way. So go ahead and give this breakfast a try I know you will love it.
Total Time: 30 Minutes Makes: 4 Servings
2 lbs. Large Potatoes 1/4 Cup Milk 2 Eggs 1/4 Cup Butter, Melted 1-1/4 Cups Flour, Use as needed 1 Cup Alpine Style Cheese 1 Tbsp. Green Onion, Chopped 1 Cup Ham, Chopped 1/2 Onion, Minced 1 Garlic Clove, Minced Salt Pepper Oil for Frying
