Recipe: Beef Bourguignon
2 to 3 Pounds Beef (Chuck works best for this dish)
1 Bay Leaf
½ to 1 Teaspoon Thyme
4 to 6 Cloves Garlic
4 to 6 Ounces Tomato Paste
2 Cups Beef Broth
8 to 10 Baby Bella Mushrooms
3 to 5 Medium Carrots
20 to 30 pearl onions
1 Bottle Red Wine (and another to enjoy with the meal)
¾ Cup Flour and 1 Cup Cold Water (to make sauce from braising liquid)
Start by cutting the carrots into about 2 inch long pieces. Cut the mushrooms into half pieces. Remove the crown and paper from the onions and prick the root end with a paring knife. Remove the paper from and crush the garlic. Slice the beef into large pieces about half the size of a fist. Heat cooking pot over high heat until good searing temperature is reached, place oil and beef into pot , sear the beef until it is brown on all sides. Pour in most of the red wine once the beef is well seared save back about ½ cup of the wine to deglaze the vegetables with. Add enough beef broth to cover the meat most of the way only small bits of the meat should poke through the top of the liquid. Add the bay leaf, thyme, Garlic and Tomato paste, stir together well. Heat this over a medium flame until it just begins to bubble then transfer the covered pot to an oven heated to 250 degrees. Allow this to braise until the meat is fork tender usually about 3 to 4 hours. Once the meat is fork tender in a large fry pan saute the vegetables one at a time placing each in the pot with the meat after they have browned lightly. Deglaze the pan the vegetables were seared in with the remaining ½ cup of red wine. And pour that into the pot. Return the braising pot to the oven uncovered for one more hour of cooking.
Once the braising has finished and the vegetables are cooked soft Separate the braising liquid from the vegetables and meat. Heat the braising liquid to a boil, mix together flour and cold water and pour the mixture into the boiling braising liquid, allow to continue boiling for at least 10 minutes to cook off the raw flour taste. Your Beef Bourguignon is now ready to enjoy.
