How To make Herbed Turkey Roast
5 lb Whole turkey breast, boned
1/4 c Parsley, chopped
2 tb Fresh thyme, minced
Salt Pepper 2 oz Fontina cheese, sliced
2 oz Prosciutto
4 Sprigs of parsley or thyme
2/3 c Chicken broth
1/3 c Dry white wine
2 tb Cornstarch
2 tb Cold water
Rinse turkey, pat dry, and place, skin down, on a board. Sprinkle meat side with chopped parsley and thyme, season with salt and pepper. Cover with cheese and prosciutto, overlapping slices. Starting with a long edge, roll up turkey firmly, jelly roll style. Overlap 3-4 sprigs down length of roll; tie roll securely with string at 2" intervals. (At this point, you may cover and refridgerate until next day.) Place turkey, thyme side up, in slow cooker. Pour in broth and wine. cover and cook until meat in thickest part is very tender when pierced (9-10 hours). Carefully lift turkey to a warm platter and keep warm. Skim and discard fat from cooking liquid; blend in cornstarch (blended with water). Increase cooker to HIGH; cover and cook, stirring 2 or 3 times, until sauce is thickened. Remove and discard strings and thyme sprigs from turkey; slice meat 1/4" thick. Garnish with additional thyme sprigs, if desired. Serve with sauce. Sunset Crockery Cookbook Typed by E.Marie Campbell

✅if you can get your hands on a oven safe thermometer please do this helps you to make sure not to over cook the turkey!
✅for each pound you roast for 13 minutes (_ x 13=_) divide the total by 60 that’s how many hours!
✅ how to Thaw a turkey properly: Thaw turkey breast side up, in an unopened wrapper on a tray in the fridge
Allow at least one day of thawing for every 4 lbs of turkey.
Keep turkey in original wrapper and place on tray.
Use turkey within four days after thawing.
✅fry brine turkey for at least 24 hours!

INGREDIENTS:
* 14-pound whole turkey
Brine ingredients:
* fill a 30 qt stock pot half way with water and bring to a boil
* 1/4 cup whole pepper corns
* 2 cups of salt
* 1 cup sugar
* 1 large onion halved
* 2 bulbs of garlic half
* 2 oranges halved
* Bundle of 6 scallions
* A bundle of 4 sprigs each of rosemary, thyme, and sage
* 4 bay leaves
Herb butter ingredients:
* 1 cup fresh flat leave parsley
* 2 sprigs each rosemary, thyme, sage
* 3 scallions
* 2 tsp salt
* 1 tsp crushed black pepper
* 1 tbsp each garlic and ginger paste
* 4 tbsp olive oil
* 1 tbsp all purpose seasoning (substitute with 1 chicken bouillon cube)
* Juice of 1/2 a lime or lemon
* 2 sticks = 1 cup of unsalted butter
*** Bake at 450° F during first 30 mins, and turn heat down to 350°F for rest of roasting time of 2-3 hrs, or until core temperature/thermometer guide pops out, or core temperature reads 165°F or more ***

Now you can cook a tender, aromatic and juicy roasted turkey fillet home. That won’t take much time, a fillet marinating and roasting without you involved, you just need to prepare a proper marinade, coat a fillet and put into a fridge and roast then for half an hour. It will come out very tasty!

• turkey fillet – 2,5 lb | 1200 g
• water – 4 cup | 1L
• salt – 4 tbsp
Marinade:
• mustard – 1 tbsp
• soy sauce – 1 tbsp
• ground sweet paprika – 2 tsp
• ground black pepper – ½ tsp
• red chili flakes – 1 tsp
• coriander seeds – ½ tsp
• herbs de provence – 1 tsp
• vegetable oil – 2 tbsp
• garlic – 3 cloves
✅ You will need:
• deep bowl
• baking sheet
• food foil
• oven
???? Preparation:
1. Melt 4 tbsp of salt in 4 cup | 1L of water stirring constantly. Deep the turkey fillet into it and leave for 2 hours, then rinse in cold water thoroughly to get rid of salt brine.
2. Combine all the ingredients for marinating in a bowl and brush the turkey fillet on all sides, cover and put into a fridge for 24 hours to marinate.
3. Preheat oven to 350°C | 180°C, line a baking sheet with a foil, lay out the turkey and roast for 30 minutes at 350°F | 180°C, switch the heat off and leave the turkey in the oven for an hour more.
4. Take the roast turkey out of the oven and cool. Keep in the fridge.
5. Serve for breakfast, lunch or dinner.
