How To make Hobo Stew And Dumplings

worcestershire sauce

teaspoon
sugar

salt

teaspoon
pepper
1/2
teaspoon
paprika
DUMPLINGS:
1
cup
flour
1/2
teaspoon
salt
1/2
teaspoon
baking powder
1/2
cup
milk
2
tablespoon
vegetable oil
Directions:
HOBO STEW: Brown meat in hot oil. Add water, worcestershire sauce, garlic, onion and seasonings. Simmer for 2 hours, stirring occasionally to keep from sticking. Add carrots. Continue cooking for 20 to 30 minutes or until carrots are done. (Cubed potatoes may be added at the same time as the carrots, or leftover green beans or peas during the last 10 minutes of cooking).
Remove meat and vegetables, thicken liquid for gravy and return meat and vegetables.
DUMPLINGS: Sift flour, salt and baking powder together. Add milk and vegetable oil to make soft dough. Drop by spoonfuls over Hobo Stew, covering top. Cover tightly and steam without lifting lid for 12 to 15 minutes or until dumplings are fluffy.

Recipe:
Serves 6-8
20 min prep, 3 hours total.
Stew Ingredients:
• 1 kg diced beef
• 3 tbs oil
• 2 medium onions diced
• 2 carrots diced
• 2 cups halved button mushrooms
• About 400mls Guiness or red wine or beer
• 2 tins crushed tomatoes
Stew Directions:
• Add the onion to a hot camp oven and fry it in the oil at medium/high heat until it starts to be translucent.
• Add the beef with some salt and pepper and stir it until it’s slightly browned (2-3 min)
• Add carrots and mushrooms then stir well for about 5 minutes.
• Add alcohol and tomatoes then season and stir.
• Then put the lid on the camp oven (no heat needed on top of the pot) and let it simmer on low heat for around 2-3 hours, or until the beef is really tender. Check it every 30 minutes to ensure the beef is still in some liquid (add water or beer if it’s looking dry).
• Serve with bread or mashed potatoes (some peas go well on the side too).
Mashed potatoes ingredients:
• 1.5kg of potatoes
• 150g butter
• 1tbspn salt
Mash directions:
• Cut the potatoes up in quarters and boil them in salted water until they are very soft (around 40min).
• Drain the water out, add the butter and use a wooden spoon or similar to vigorously stir the mixture until it becomes smooth(ish) – about 5 minutes. No potato masher required.

Ingredients
1½ lbs. chicken thighs, boneless, skinless, cut into bite size pieces
1 Tbsp. canola oil
3 medium carrots, sliced diagonally into ½-inch pieces
1 medium sweet onion, cut into 12 wedges
6 garlic cloves, chopped
5 cups chicken stock, divided
2 Tbsp. all-purpose flour
1 dried bay leaf
12 oz. baby white potatoes, quartered
¼ cup fresh chopped parsley
salt and freshly ground black pepper
( i always add in extra seasonings... I added about 1/2 to 1 tablespoon of oregano...around a teaspoon of paprika...and around 1/2 tablespoon of garlic and herb seasoning)
Season the chicken with salt and pepper, to taste.
Heat oil over high heat. Add chicken and cook, stirring occasionally, until brown on all sides, about 6 minutes total. Transfer to a plate.
Add carrots and onion to the pot and cook, stirring often, until onions begin to soften, about 4-5 minutes. Add garlic and cook for about 30 seconds, stirring nonstop. Add ½ cup chicken stock while stirring and scraping to loosen browned bits from the bottom of the dutch oven.
In a small bowl, whisk together flour and ½ cup broth; add to the dutch oven. Stir in chicken and remaining 4 cups of chicken broth. Add bay leaf and season with salt and pepper, to taste. Bring to a boil, reduce heat to medium-low and simmer 25 minutes, partially covered.
Add potatoes and cook uncovered until potatoes are tender, about 18-20 minutes. The liquid will slightly reduce even further. Stir in parsley and discard bay leaf before serving.
