How To make Hoppin' John
1/2 lb Blackeyed peas, dry
;Water to cover 1/4 c Onion; chopped
1 Garlic clove; minced
1/2 c Rice
1/2 c Ham, cooked
1/2 t Salt
1/4 t Pepper
1 t Oregano, dried; crushed
1 ds Cayenne
1 T Oil
1 Bay leaf
Calories per serving: 157 Fat grams per serving: 6 Approx. Cook Time: 1:00
Wash peas; add five cups boiling water. Parboil three minutes. Remove from heat, cover and soak four hours. Drain and rinse peas. Saute onion and garlic in oil until onion is tender. Add soaked peas, ham, 1 1/2 cups water and seasonings. Bring to a boil. Reduce heat and simmer, covered, until beans and rice are tender (approximately 25 to 30 minutes). Remove bay leaf before serving.

The legend of Hoppin' John is one that starts on a serious note but turns into a celebration. In the days after the American Civil War, the South had been devastated and many Southerners were left with precious little, except for blackeyed peas, extra animal pieces like ham hocks and these neck bones, and collard greens, which the Northern troops felt were only good for feeding animals. These dishes became cherished and appreciated , as they saved many a family from starvation during those times, and the tradition of celebrating these dishes with the New Year was born. The black-eyed peas represent pennies, and the collard greens are for paper currency, while the cornbread served with this dish is meant to be gold. Whether or not this is true, it's a popular New Year's tradition that goes with a wish for welath and prosperity in the new year to come.

1 lb of black-eyed peas (soaked)
4 sliced smoked bacon thick-cut or preferred
sausage link (Kielbasa Sausage by Hillshire Farms) I used turkey but use preferred
bell peppers, red/green diced
2 bay leafs
4-5 garlic cloves
2- 3 Stalks of Celery
1 onion diced
black pepper to taste
cajun seasoning
smoked paprika
1 tsp thyme dried or fresh
1 tbsp chicken bouillon + 4 cups of water combined
3 cups of water
parsley fresh garnish

Hoppin John ( Black Eye Peas the EASY WAY)! New Year's Special! Collard Greens | Cornbread Muffins
Black eye peas have been served on New Years in the South for years. This traditional dates all the way back to Civil War times. Black eye peas were considered slave food and animal food; it was on of the few things enslaved people had to eat during the harsh winter.
Hoppin John
2 -3 cans black eye peas
4 slices thick cut bacon
1 celery stalk
1/2 red bell pepper
1/2 onion
3 cloves garlic
1 tsp low sodium chicken bouillon
thyme
1 tsp smoked paprika
1/2 tsp pepper
1/2 tbsp low sodium Cajun seasoning
1/2 tsp garlic powder
Collard Greens
Bacon fat
collard greens, kale
1 tsp low sodium chicken bouillon
1/2 tsp crushed red pepper
1/2 tsp smoked paprika
1 tsp sugar
1 tsp Cajun seasoning
1/2 onion
3 cloves garlic
*season to taste depending on how much greens you have
Cornbread
1 box jiffy
1/2 cup sour cream
1/3 cup evaporated milk
1 eggs
1 tbsp honey
2 tbsp butter
1/4 tsp salt
