Stuffed Cabbage Rolls Recipe with Sauerkraut Hungarian German Rice
Vanessa shows you how to make cabbage rolls from start to finish using a traditional Transylvanian recipe. If you don’t have access to sour cabbage heads Vanessa tells you about a couple of workarounds. To get started you’ll need sour cabbages, sauerkraut, sauerkraut juice, ground pork, rice, onions, sea salt, pepper, eggs, parsley is optional, and bacon is optional. Make as many as you like, but it's a good idea to make a big batch. Here Vanessa uses 4 heads of sour cabbage to make around 60 cabbage rolls.

In fact, the aunt of Vanessas’s Godmother, Gertrude Floege, was the famous fashion designer Emelia Floege – life companion of the famous artist Gustav Klimt who frequently painted at the Paulick Villa..
Also the last Countess Maria dei Medici, who lived adjacent to the Eschen Villa hand wrote a poem for Vanessa as a child… Not many People can say that!
Vanessa got her teaching Degree in Salzburg but her real love and talents were for cooking.. after moving to Vancouver Island, she honed her chef skills under the eye of her brother in law Dieter von Schellwitz who had been the first executive chef at the famous Ilikai Resort in Waikiki, and had chef career in New York and San Francisco.

Töltött Káposzta, Stuffed Sauerkraut
Ingredients used to make the Sauerkraut itself:
1 Cabbage
4 Slices of Bread
4 Cloves of Garlic
6 Bay Leaves
Cover with boiling water
Leave for 2 days before proceeding to stuffing.
Ingredients used to make the stuffing:
1 Packet of 250grams Rindless back bacon
500 grams of mincemeat (beef or pork)
1 Teaspoon of Fresh Ground black pepper
1 Tablespoon of Paprika
1 Egg
Half a cup of Raw white rice
Half a tablespoon of salt
Ingredients used to make the Roux
3 Tablespoon of Oil
1 and half Tablespoon Flour
1 Tablespoon of Paprika
Cover with Water

2 LBS Ground Beef
1 LB Ground Pork
1 Medium Head of Cabbage
1 Medium Onion, diced
2-3 Green & Red Peppers
5-6 Strips of Cooked Bacon, crumbled
2 Strips of Uncooked Bacon
1 Cup Long Grain Rice, soaked in cold water
1 Egg
Bacon Grease
Salt, Pepper, & Paprika (to taste)
1 Jar of Sauerkraut, no caraway seeds
28oz Can of Crushed Tomatoes
46oz Tomato Juice
Several Cans of Water
Sprinkle of Sugar

Croatian traditional dish! Especially good to eat in winter time. Its a permented cabbage or sauerkraut. This is one of my favorite croatian foods. Its yummy and healthy ????
Ingredients :
1 head of Sauerkraut
500 g grated Sauerkraut
3/4 kg minced pork
1/4 kg minced beef
1 /4 kg smoked bacon
Some bacon mince with the meat
2 eggs
1 big onion
1 cup of rice
4 tsp Red pepper powder
Salt and pepper to taste
