How To make Hunt's Roast Beef
4 lb Beef roast(boneless)
1 t Beau Bonde seasoning (or sal
1/2 ts Lemon Pepper
2 tb Vegetable oil
1 cn Tomato sauce (15-oz)
2 ea Medium onions, sliced
1 1/2 c Sliced celery
1/2 ts Garlic powder
1 t Sugar
4 ea Carrots, quartered
2 ea Medium potatoes, quartered
1 x (scrubbed and unpeeled)
1 c Dry wine
Sprinkle roast with salt and pepper (or Beau Monde). In dutch oven, brown roast in hot oil; drain. Add remaining ingredients, except carrots and potatoes. Simmer, covered, 1 1/2 hours. Add vegetables, cover, and simmer 1 hour longer. When I feel lazy, I simply spray the crockpot with non-stick cooking spray (ie., Pam), omit the oil, add the roast, and then mix the remainder of the ingredients with a little wine, pour it over the roast, and let it cook on LOW for about 6 hours. Roast Woodcock and Puffball Recipe - Upland *Hunt and Cook*
I’m upland hunting for woodcock so I can cook roast woodcock, based on Hank Shaw’s recipe in “Pheasant, Quail, Cottontail”. This book has so many great recipes, but he also has an extremely expansive recipe collection on his website linked below. The only real liberty I took was to use a puffball mushroom rather than toast. Woodcock hunting is some really fun and challenging hunting requiring negotiating some really thick and thorny brush, and very quick shots at fast, small birds. I’ve never felt such success from such a small harvest of meat, but it really is a unique and very delicious meat deserving of such a tough hunt.

Awesome vintage pot roast recipe using Hunts Tomato Sauce! Old school Family pleaser!
Pot Roast - Hunt Style! Using Hunt's tomato sauce 1952 recipe. Cooked in a Corning Visions 5L stock pot. What I used and original recipe below.
3.5lb Rump Roast
1-1/2 med-large onions, sliced (1 thinly, 1/2 coarse)
1 29 oz can Hunt’s Tomato Sauce
1 cup water
8 cloves
1 tsp. salt
¼ tsp. Pepper
1/2 tsp. Ginger
6 small potatoes
6 carrots
Olive oil
Rub roast with light flavored olive oil, pat off excess.
Sear in oven 500 degrees for 13 minutes.
While roast is resting, sweat onions in pot.
Add in tomato sauce, water and remaining ingredients.
Bring to low simmer and cover with tight fitting lid.
1 hour - bast, re-cover.
2 hours - flip, baste, re-cover.
2 hours 45 minutes - add in potatoes, carrots re-cover.
3 hours 35 minutes - remove roast and cover with foil. Remove and cover potatoes/carrots. Skim fat from sauce and simmer uncovered 10-15 minutes while roast is resting.
Original Recipe
Use a deep heavy pan. Brown Meat on all sides in: 1/4 cup drippings or shortening. Add:
2 medium onions, sliced
2 cans Hunt’s Tomato Sauce
2 cups water
8 cloves
1 tsp. salt
¼ tsp. Pepper
¼ tsp. Ginger
Cover tightly. Simmer over low heat 3 to 31/2 hours or until tender. The liquid will be rich and savory, thanks to Hunt’s Tomato Sauce.
Add: 6 to 8 potatoes pared
6 to 8 carrots
1 tsp. Salt
Cook 30 minutes longer till tender. Then-
Get ready for Joy! Your delicious roast will serve 6 to 8 people.
