How To make Hunters Pheasant
1 Pheasant,pcs,hang 3day max
2 tb Sunflower oil
1 Onion,chop fine
1 lg Carrot,chop fine
2 Celery stalks,chop fine
8 oz Chicken stock
S&P 1 Bouquet garni
1 tb Arrowroot
4 tb Redcurrant/quince jelly
Preheat oven,350F In ovenproof pan fry pieces of pheasant til lightly golden. Add onion, carrot & celery & fry a couple of min. Cover with stock & season generously, add bouquet garni, & bake oven about 1hr & 20min. Remove pheasant & keep warm. Add arrowroot, mixed w/little water, & jelly & bring to boil, stir til thickens. Return pheasant to sauce & serve w/mashed potato & red cabbage.

- Salt and Pepper to taste
- Garlic ???? 2 to 3 cloves
- Butter ???? 20 grams
- Olive Oil
- Thyme to taste
- Jalapeño half of one
- Tomatoe one and a half medium
- Place the breasts into the sous vide bag
- Seal the bag
- Set the your water circulator to 145F and wait until your water is at the desired temperature
- Place sealed bag into the water bath and set the count down on your clock as 45 min

The best wild pheasant recipe EVER!
If you have never tried pheasant, you should find some! It's more flavorful than chicken and is great in this recipe. In this video, I will show you how to cook the best wild pheasant dish ever. I have cooked pheasant several ways over the years and found a version of this recipe last year. I have made a few changes and now I am ready to save it. This is the best EVER! Enjoy!!
4 pheasant breasts, skinless
1 tbsp butter
1 tbsp olive oil
1 tsp salt
1 tsp pepper
1 garlic clove, diced or minced
6 oz salt pork
8 oz baby bell mushrooms, sliced
2.5 oz expensive white wine
4 oz heavy cream
1 tbsp spicy mustard
1 tbsp parsley
Melt butter and oil in a pan. Salt and pepper the breasts. Cook breasts 4 minutes per side, or until done.
Remove breasts from pan to rest. Add garlic, mushroom, and garlic to the pan, and cook on medium-high until mushrooms are tender.
Add white wine, and cook until the liquid is mostly gone.
Add cream, mustard, and parsley. Simmer 3-4 minutes. Then return breasts to pan and warm through, 3-4 minutes.
Serve as-is, or over your favorite pasta.

Hunting and Cooking Montana Pheasants with Ryan Callaghan and Chef Kevin Gillespie
Ol Cal, Chef Kevin, and Snort knock off work a bit early one day to hunt some of the last of the season’s Montana pheasants. With a couple plump roosters in hand they return to Cal’s place so that Kevin can show him a classic French dish that transforms the tough to use legs and thighs of the pheasant into a meal fit for a king; or at least a hungry upland hunter.
