How to make The Most Easy & Delicious Dinner Casserole
Bake at 400degrees (f) for 10-15 mins
Ingredients
Oil
1 to 2 pounds of ground beef
1 can of tomato green chili (hatch)
3 Tbsp taco season of choice
1 1/2 Tbsp Knorr chicken bouillon (adjust to taste)
12 corn tortillas
2 Cups Mexican red rice
3 cups Mexican cheese blend
1 small can of black beans (15oz)
Half finely chopped Iceberg lettuce
16oz Mexican sour cream
Pico de Gallo
Hot sauce
Pico de Gallo
1 large tomato
1/4 onion
Half a jalapeño
Small bunch cilantro
Lemon juice and salt to taste

Ingredients
2 lb lean ground beef
½ cup diced onion
2 cloves garlic, minced
1 (28 oz) can crushed tomatoes
2 (6 oz) cans tomato paste
2 (6.5 oz) cans canned tomato sauce
½ cup water
2 tbsp white sugar
1 ½ tsp dried basil leaves
½ tsp fennel seeds
1 tsp Italian seasoning
1 ½ tsp salt, divided, or to taste
¼ tsp ground black pepper
4 tbsp chopped fresh parsley
16 oz ricotta cheese
1 egg ¾ pound mozzarella cheese, sliced
¾ cup grated Parmesan cheese
Lasagna sheets
4 cups flour
4 whole large eggs
5 large egg yolks

MEAL PREP WITH ME! | Supreme Pizza Bake & Burrito Bowls
Hey, hi, hello everyone and welcome back to Morgs' Menu!
In this video, I walk you through how I prepare two new meal prep recipes: Supreme Pizza Chicken Bake and Chipotle-Style Burrito Bowls. One we had never tried before and the other we've done 100 times before! See the description below for the full recipe ingredient lists and steps.

Step-by-step of this video below:
Supreme Pizza Chicken Bake with pasta & zucchini
Ingredients - Chicken Bake:
1 lb. thin sliced chicken breasts
1 bell pepper, sliced
1/2 medium onion, sliced
1 6 oz. can tomato paste
1 tsp. olive oil
1 tsp. each of: garlic powder, oregano, salt & pepper
1 c. shredded mozzarella
1 3.8 oz. can sliced olives (optional)
15 - 20 slices pepperoni
Instructions-
1. Preheat oven to 400 degrees F
2. Slice bell pepper and onion
3. Combine tomato paste, olive oil, garlic powder, oregano, salt & pepper in a small bowl
4. Spray large baking dish with cooking spray
5. Arrange bake by layering chicken, prepared sauce, bell pepper, onion, cheese, olives, and pepperoni
6. Bake for 30 minutes and divide into four containers
Sides:
Ingredients-
2 c. uncooked pasta, 1 tbsp. olive oil & 1 - 2 tbsps. parmesan
2 large zucchini, 1 tbsp olive oil, salt & pepper to taste
Instructions (pasta)-
1. Boil pasta according to bag/box instructions
2. Drain pasta
3. Add olive oil and parmesan, stir to combine
4. Arrange as base to chicken bake
(Zucchini)
1. Heat pan and oil to medium heat
2. Sauté zucchini for ~10 minutes or until beginning to become translucent
3. Add salt & pepper to taste
Refrigerate each container until ready to serve and microwave to desired temperature.
Chipotle-Style Burrito Bowl:
Ingredients-
1 lb. pork tenderloin previously seasoned (or any other preferred meat)
1 c. uncooked rice
2 – 4 tbsps. lime juice
1 tbsp. cilantro
1 15 oz. can beans (black or pinto)
½ c. shredded Mexican blend cheese
½ c. corn (canned or frozen)
½ c. salsa
¼ c. plain Greek yogurt or sour cream
2 c. shredded lettuce
Instructions-
1. Preheat oven to 400 degrees F
2. Cook pork in over tenderloin for 30 minutes
3. Cook rice in rice cooker or on stovetop according to package instructions, adding 1 – 2 tbsps. lime juice in water during cooking process.
4. When pork is fully cooked, shred or slice into bite size pieces
5. When rice is done, add an additional 1 – 2 tbsps. lime juice and cilantro
6. In the “warm ingredients” containers, add ¼ of prepared rice, beans, cheese, corn, and salsa into each
7. In smaller “cold ingredients” containers, add ¼ of lettuce and Greek yogurt/sour cream into each
Refrigerate each container until ready to serve and microwave “warm ingredients container” to desired temperature. Combine each container to serve.
