How To make Iridofu
1 tb Oil
1 sm Onion, diced
1 sm Carrot, diced
24 oz Tofu, crumbled
2 tb Roasted sesame seeds
1/2 ts Salt
2 ts Shoyu
1 ds Pepper
Heat a wok & coat with oil. Add onion & carrot & saute for 3 minutes till onion is slightly browned. Add crumbled tofu & the remaining ingredients. Stirring constantly, saute over medium low heat for a bout 5 minutes, or until the tofu is light & dry. Variations: Add 1/4 c of any of the following: parboiled green peas; shiitake mushrooms; diced bamboo shoots. Also try adding 1 ts grated ginger. Shurtleff & Aoyagi, "The Book of Tofu"

1 block very firm tofu
1 bitter melon
salt
3 slices spam ( or thinly-sliced pork belly )
2 eggs
oil
1/2 tsp instant dashi powder
pepper
salt
dash soy sauce

Japanese Scrambled Tofu is a simple yet delicious dish that's very common in Japan. All you need are just a few ingredients to make Iridofu. Subscribe for more videos!

INGREDIENTS Serves 2
1 block firm tofu
100 grams chicken, cut into bite-sized pieces
3 pieces dried shiitake mushrooms reconstituted ( keep water )
1/2 carrot, julienned
4-5 pieces green beans
1/2 cup green onions, sliced
1 egg
salt and pepper to taste
1 1/2 tablespoons soy sauce
1 tablespoon sugar
1 tablespoon white wine or mirin
DIRECTIONS:
Boil tofu for 2-3 minutes. Break up tofu.
Slice shiitake mushrooms. Cut green beans diagonally.
Drain tofu in cloth. Squeeze water out of the tofu.
Stir fry chicken, carrots and green beans in a little oil.
Add shiitake mushrooms, salt, pepper and tofu.
Stir fry until tofu is completely dry.
Add sugar, white wine, soy sauce and 2 tablespoons shiitake water. Beat egg. Pour over tofu mixture. Add green onions. Stir fry for 1 more minute or until egg is fully cooked. Serve.

炒り豆腐を作ります。
簡単でボリュームも出る料理、豆腐の水切りをしっかり行い、
干し椎茸の香り・ダシを上手く活用するところがポイントと思います。
<材料>(2人分)
・木綿豆腐 1丁
・鶏肉 100g(もも肉・ムネ肉お好きな方を)
・干し椎茸 3個(水で戻しておく。戻し汁は捨てない)
・ニンジン 1/2本
・インゲン 4~5本(インゲンで無くとも構いませんが、緑色が
入った方が見た目も鮮やかです)
・ネギ 1/2カップ(小口切り)
・卵 1個
・塩胡椒
・醤油 大さじ 1と1/2
・砂糖 大さじ 1
・白ワイン 大さじ 1
<作り方>
・木綿豆腐を崩して2~3分茹でます。
・お湯から上げて布巾等の上において冷まします。冷めたら
布巾でくるみ、水分を絞ります。しっかり水切りをした方が
美味しく出来るようです。
・干し椎茸をスライスします。
・ニンジンは4cm程度に切り、細切りにします。
・インゲンは斜め切りにします。
・鶏肉は1~2cm程度角に切ります
・鶏肉、ニンジン、インゲンを炒めます。鶏肉に火が通ったら椎茸を入れます。塩胡椒をします。
・豆腐を入れて炒めます。椎茸の戻し汁を少々入れて風味付け
・醤油・砂糖・白ワインを入れて味を調えます
・最後にネギを入れてざっと炒め、できあがり。

Shiraae (Mixed Tofu and Spring Vegetables) Recipe | Cooking with Dog
We are making healthy nutritious Shiraae, mixed tofu and spring vegetables. The aroma of the toasted sesame seeds brings out the flavor. You should definitely try it out.
How to make Shiraae
(2 people) Cook Time: 15 minutes
150g Firm or Soft Tofu (5.3 oz)
1/2 tsp Dashi Soy Sauce or substitute: mentsuyu or soy sauce
2 tbsp Toasted White Sesame Seeds
1/2 tbsp Sugar
1/4 tsp Salt
100g Nanohana also known as Broccolini or substitute: broccoli, snap bean pods or spinach (3.5 oz)
20g Carrot (0.7 oz)
30g Shimeji Mushrooms (1 oz)
4 tbsp Water
1/2 tsp Dashi Soy Sauce or substitute: mentsuyu or soy sauce
* 1 tablespoon (tbsp) = 15 ml, 1 teaspoon (tsp) = 5 ml

Slightly more than a handful of snow peas
2 small carrots
A packet of firm tofu
3 shittake mushrooms, soaked to rehydrate
1.5 tbsp soy sauce
1.5 tbsp sugar
1 tbsp mirin
3 eggs (extra protein)

INGREDIENTS:Serves 2
1/2 medium onion, sliced
1/4 cup frozen peas
1/2 cup shrimp
1 clove garlic, minced
3/4 cup uncooked rice
1 cup chicken stock
1 tablespoon olive oil
salt and pepper to taste
DIRECTIONS:
Saute the garlic for a few minutes in olive oil. Stir fry onions and green peas for 2-3 minutes. Add shrimp and cook for 1 minute. Make a well in the center. Add rice. Add chicken stock on top of the rice. Cover and cook on medium-low heat for 20 minutes. Stir to mix ingredients. Serve hot and enjoy!

<材料>(2人分)
・タマネギ M1/2個(スライス)
・グリーンピース 1/4カップ
・むきえび 1/2カップ
・にんにく 1かけ(みじん切り)
・お米 3/4カップ
・チキンストック 1カップ
・オリーブオイル 少々
・塩コショウ
<作り方>
・にんにくのみじん切りを、オリーブオイルで狐色になるまで炒めます
・タマネギ、グリーンピースを入れて、タマネギが半透明になるまでざっと炒めます
・むきえびを入れて、赤く色が変わってくるまで炒めます
・具をフライパンの周囲に寄せ、中心部にお米を入れて平らにします
・チキンストックを米に満遍なくかけ、中火にかけます
・沸騰したら弱火にして20分、そのまま炊き込みます。途中、完全に水分がなくならないよう火加減に注意します(焦げ付きます)
・炊き上がったら具とライスを混ぜ込み、塩コショウで味付けをします。
これで出来上がり。
