1 1/2 c Warm Water 1 T Instant Coffee Crystals 1/4 c Irish Whiskey 1 x Brown Sugar To Taste 1 x Dessert Topping * * Dessert topping should be in a pressurized can. ~------------------------------------------------------------------------- In a 2-cup measure combine water and instant coffee crystals. Micro-cook, uncovered, on 100% power about 4 minutes or just till steaming hot. Stir in Irish whiskey and brown sugar. Serve in mugs. Top each mug of coffee mixture with some pressurized dessert topping.

I had a thing for Jameson Irish Whiskey back in my bartending days so even though me and coffee don't quite get along, Jameson, too, always makes everything better. For me anyway. For the night anyway (the morning is a whole different story). For this simple Irish Coffee with Baileys, you only need 3 other ingredients besides the obvious Irish Whiskey + Baileys - two of which are optional. Coffee - a must in this Irish Coffee with Baileys. And Maple syrup - for added sweetness, which is optional. And/or Whipped cream - for added creaminess. Also optional.

Bartender John Jeide Makes Irish Coffees at the Buena Vista Cafe in San Francisco
Make your own Irish coffee with this recipe: 1) Fill glass with hot water to heat it up, then dump out the water. 2) Drop in two cocktail sugar cubes. 3) Pour hot coffee over the sugar cubes, to fill about 3/4s of the glass. 4) Stir until the sugar is dissolved and mixed. 5) Add Irish whiskey with a bit of room left in the glass. 6) Spoon heavy, cold cream on top.

During the 1940s Joe prepared a round of spiked coffees for some weary travelers and after one patron asked Is this Brazilian coffee?, Joe replied No, it's Irish coffee!. A writer sampled the Irish Coffee while transiting through the Irish airport in 1952 and upon his return to San Francisco he shared the drink with his friend Jack Koeppler, then owner of the Buena Vista Cafe. They didn't know the exact recipe so they trialed and tinkered until they replicated the drink. The cafe became famous for their Irish Coffees and now serve 1000s each day!
