Simple Irish Soda Bread
Irish Soda Bread — so simple and satisfying! Soda bread, classically made with buttermilk and baking soda as a leaven, tastes like a cross between a biscuit and a scone. It's slightly sweet, and when slathered with good salted butter or some orange marmalade it is such a treat. This bread comes together in no time.

Irish Soda Bread | Easiest Bread Ever! #irish #stpatricksday #bread
This Irish Soda Bread is a very simple bread to make! It is an enriched dough, made with buttermilk, flour, and butter. The raisins are a yummy addition! It has a tender moist crumb with a crunchy crust ???? No wonder this is Ireland's favorite bread!!
INGREDIENTS:
1 cup white whole wheat flour
2 1/2 cup ap flour
1 tsp baking soda
1 tsp salt
1 cup raisins
4 TBSP unsalted butter cold
1 egg
2 TBSP butter melted
Preheat oven to 375 degrees. Cut out a circular, 10 inch round of parchment paper. Cover the bottom of a 10 inch cast iron skillet and lightly grease with butter. Set aside.
Add both types of flour, baking soda, and salt to a large bowl. Whisk well. Dice cold butter and add to the flour mixture. Coat the butter in the flour. Cut in using a pastry cutter or you can use your fingers to pinch it in. Do this until it resembles coarse crumbs. Make a well in the center.
In a separate bowl, add buttermilk, egg, and honey. Whisk well to combine. Add wet mixture to the well in your flour. Add raisins. Use a wooden spoon to mix it together. Don't overmix.
Heavily flour a hard surface. Lay your ball of dough onto the surface. Coat well in the flour. Pat out to make it a little flat and smooth out the edges. Fold it up on itself by grabbing the edges and folding it like a business envelope. (Refer to the video.) Flip over and shape into a ball. Place your dough in the cast iron skillet and let it rest for 15 minutes.
Bake at 375 degrees for 35-40 minutes. It should be a delicious, golden brown color. Brush melted butter over the bread. Allow to cool. Slice and serve! Store in a sealed ziploc bag for up to 5 days. Enjoy!! Happy St. Patrick's Day!!
