One 16 ounce bag brown lentils (equals 1 pound)
1 large onion, diced
2 large carrots, peeled and diced small
1 large celery stalk, diced small
2-3 garlic cloves, minced fine
1 tablespoon dry oregano
2 bay leaves
2 quarts of vegetarian or chicken broth
2 cups crushed tomatoes (or pureed tomatoes)
1 teaspoon kosher salt added to veggies in pan, extra later to taste
ground black pepper to taste

¼ cup olive oil extra virgin
1 medium onion finely diced
2 carrots finely diced

½ cup white wine
14 ounces canned whole tomatoes 2 cups, hand crushed
2 cups lentils (brown or green) picked over and rinsed
8 cups stock vegetable or chicken, low sodium

½ teaspoon thyme dried
4-5 leaves of fresh basil

My lentil soup recipe has an aromatic twist - fresh rosemary and oregano which I’m convinced Nonna would approve of, just the smell in your kitchen is enough to tempt tastebuds! Each bowl is filled with soft lentils drowning in a delicious herby tomato broth then topped with crispy bread bites and a fresh parsley garnish.
