How To make Italian Style Vegetables with Pasta (Lf)
2 tb Stock, Vegetable;*
1 ea Pepper, red; seeded and
-coarsely chopped 1 ea Pepper, green; seeded and
-coarsely chopped 1 ea Pepper, yellow; seeded and
-coarsely chopped 2 sm Zucchini; cut into 1/2 inch
-slices 1/2 md Onions, red; chopped
1 cl Garlic; minced
14 oz Tomatoes, whole; peeled in
-sauce 4 lg Tomatoes, sun-dried; softend
-& chopped 2 tb Fresh oregano; chopped or
-1/2 tsp dried 2 tb Fresh basil; chopped or
-1/2 tsp dried 1/2 ts Salt, sea;
1/2 ts Pepper, black; freshly grnd
4 ea 2 1/2 oz servings of your
-favorite pasta
PER SERVNG=1C PASTA&1C SAUCE:
280 x *cals
1 7/8 x *gm fat
481 1/4 x *mg sodium Heat a large skillet. Add the stock and all the ingredients except the pasta. Cover and cook over medium-low heat for 15 to 20 minutes, or until al dente. Cook the pasta according to the package directions. Drain well and serve with the vegetable sauce. Makes 4 servings. One serving is equal to 1 cup pasta and 1 cup sauce. *I used the water from soaking the sun-dried tomatoes instead of the vegetable broth. We really enjoyed this, it's DELICIOUS! Vegetable Pasta Bake tasty, filling comfort food
My Vegetable Pasta Bake is a veggie packed dinner that even the meat-eaters will devour - this vegetable pasta bake is tasty, filling comfort food.

Ingredients:
400 g (14 oz) dried pasta shapes (I used rigatoni)
1 tbsp vegetable oil
1 large red onion peeled and chopped into wedges
1 red bell pepper de-seeded and chopped into large chunks
1 yellow bell pepper de-seeded and chopped into large chunks
1 courgette (zucchini) chopped
pinch of salt and pepper
2 cloves garlic peeled and minced
1 tbsp tomato puree
½ tsp dried oregano
½ tsp dried thyme
2x 400 g (14 oz) tinned chopped tomatoes
120 ml (1/2 cup) double (heavy) cream
100 g (3 packed cups) fresh baby spinach
100 g (1 packed cup) strong cheddar cheese grated
100 g (1 packed cup) mozzarella grated
Small bunch parsley roughly torn

Ingredients:
1 tbsp Olive oil
1 tbsp Butter
1 tbsp Garlic Paste
1 Onion, finely chopped
1/2 Yellow Capsicum, cut into squares
Green Capsicum, cut into squares
2 Tomatoes, boiled&pureed
2 cups Water
100 gms Spaghetti
1/2 cup Baby Corn, chopped
1 cup Broccoli florets
1 tsp Oregano, dried
8-10 Basil leaves
1 tsp Red Chilli Flakes
1/4 tsp Pepper Powder
6-7 Cherry Tomatoes
3 tbsp Cheese, grated
3/4 cup Fresh Cream
Salt to taste
Method of preparation:
Heat oil in a vessel, add butter, garlic paste, give it a mix.
Add onion and cook it for 2 minutes.
Add yellow, green capsicum and cook it for a minute.
Add tomato puree, cook it for 3-4 minutes.
Add water, once the water comes to a boil, add spaghetti, baby corn, broccoli and cover it and cook it for 8 minutes.
Add oregano, basil leaves, red chilli flakes, pepper powder, cherry tomatoes, cheese, fresh cream, salt, give it a good mix and let it cook for 3-4 minutes.
Our Creamy One Pot Spaghetti is ready to serve.
