If you want to make an easy, yet flavorful meal, chicken fajitas is the way to go. This is such an easy 30 minute recipe with an amazing marinade and few steps to follow. It’s a very popular dish that everyone has most likely eaten at least once at a Mexican restaurant and now you can make it at home. Once your fajitas as done, you can serve by simply making some delicious tacos or turn it into an entree accompanied by a delicious Mexican rice and salad. Whatever your choice is, you are going to love it!

2 lbs chicken breast or thighs
Vegetables ????????
3 bell peppers
1 medium white onion
For the Marinade
1/2 cup olive oil
5 small garlic, cloves
3 TBSP lime juice
1/2 tsp ancho Chile, ground
1 tsp paprika
1/2 tsp onion powder
1/2 tsp cumin, ground
1 tsp black pepper, ground
1 1/2 tsp salt, kosher
Top at the end
Drizzle lime juice
Chopped cilantro
Serve with
Corn or flour tortillas
*Add salt salt to taste at the end to adjust seasoning.

1kg (2.2lbs) - Chicken Breast, Sliced Into Strips
2 tsp (5g) - Paprika
2 tsp (5g) - Onion Powder
2 tsp (5g) - Garlic Powder
2 tsp (5g) - Ground Cumin
1 tsp (1g) - Chilli Powder
2 tsp (6g) - Cornstarch
1 tsp (5g) - Sea Salt Flakes
1 Tbsp (20ml) - Olive Oil
2 - Brown (Yellow) Onions, Thinly Sliced
1 - Red Bell Pepper (Capsicum), Thinly Sliced
1 - Yellow Bell Pepper (Capsicum), Thinly Sliced
5g (0.2oz) - Fresh Oregano, Roughly Chopped (Substitute for 1 1/2 tsp - 2g of Dried Oregano)
Guacamole -
1 - Avocado, Coursly Mashed
1/4 - Red Onion, Diced
1 - Tomato, Diced
1/2 - Jalapeno, Diced
5g (0.2oz) - Coriander (Cilantro), Roughly Chopped
1/2 - Lime, Juiced (You can use zest if you'd like to)

1/2 - Lime, Juiced (You can use zest if you'd like to)

Chicken breast recipe | How to make chicken fajitas | One pan chicken and veggies | Mexican chicken fajitas recipe
When it comes to weeknight chicken recipes, chicken fajitas always tops my list. This almost authentic chicken fajita recipe is the best I've made so far. Tried to make this as authentic as possible although I could not find ancho chile anywhere ☹️ so substituted with chilli flakes instead. If you can get your hands on it, do you that instead.
This recipe is perfect for meal prep as you can make so many other dishes with it. I love stuffing it into a tortilla, wrapping it in lettuce or enjoy it over a bowl of warm buttered rice. Trust me, once you give it a try, you'll want to eat it every week too!
Ingredients:
500g/1 lb boneless chicken breast or thighs
3 bell peppers (I used red, yellow and green)
1 onion (red or yellow)
1/4 cup cooking oil
4 cloves garlic
1/2 tsp cumin seeds
5 black peppercorns
1 tsp oregano
1 tbsp red chilli flakes (use ancho chille if available)
1/4 cup lemon juice
Tips:
• Prepare a large batch so you have leftovers because leftovers taste even better!
• Pair it with tortilla, salsa, sour cream and guac/over rice/as is
• Marinade it for an hour if you're not short on time
• Chicken thighs are better for tender meat
• You can use a grill pan if you don't have a skillet to get nice charring around the meat and veggies
