How To make Jalapeno Jelly
3/4 c Jalapeno (or serrano)
-peppers 2 md Green bell peppers, seeded
-and sliced 1 1/2 c Distilled white vinegar
6 1/2 c Sugar
6 oz Bottle liquid pectin
1 tb Dried red pepper flakes
Green food coloring, -optional Servings: makes 4 - 1/2 pint jars Notes: Generally used as an hors d'oeuvre with cream cheese on water biscuits. (That's Horses de Ovaries, Al). You can also use it as a glaze for meats, game, and poultry or as an accompaniment to meats or game. Place jalapeno peppers, green peppers, and vinegar in bowl of food processor. Using metal blade and quick on and off turns, finely grind peppers. Scrape pepper mixture into heavy saucepan. Stir in sugar. Cook over high heat, stirring constantly, until liquid comes to a full, rolling boil. Boil for 10 minutes. Remove from heat. Stir in liquid pectin, red pepper flakes, and 2 to 3 drops food coloring, if desired. Immediately pour into hot sterilized jars and vacuum seal. Jalapeno Jam Recipe - How to Make Jalapeño Jam
This jalapeño jam recipe is the perfect way to use up fresh red and green jalapeños from your garden or local farmer's market! Try it over cream cheese with crackers, top it on a burger, put a dollop on grilled salmon, or make a spicy peanut butter and jelly sandwich!
JALAPENO JAM RECIPE
1/2 pound red fresno or jalapeño peppers
1/2 pound green jalapeño peppers
1/2 cup balsamic vinegar
1/4 cup olive oil
1 1/2 cups white sugar
2 1/2 cups water
Salt to taste
Remove stems and seeds from peppers and slice thinly.
Heat a large sauté pan over medium-high heat and add the olive oil. When the oil is hot, add the peppers and sauté until they are softened. Next add the sugar, vinegar and water. Bring to a boil.
Lower heat and simmer about 30 minutes, until the mixture is thick and syrupy.
Season with salt and place in a Mason jar with a lid. This keeps up to 2 weeks stored in the refrigerator.

I came upon my first mention of jalapeno jelly in a recipe for something else - it was just sort tossed in as a passing thought. The rest if the recipe was mildly interesting, but I thought to myself, I need to learn how to make jalapeno jelly. The spicy and the sweet are such a nice contrast that it would be great on corn biscuits or buttermilk biscuits. And that turns out to be true - but it is really good on lots of things.

Our jalapeno plants have produced a ton of jalapenos this year, and one of our favorite recipes to create is Jalapeno Jelly. This is a supper easy recipe that everyone must try. It's not spicy, it's sweet with a hint of heat. Perfect for pork, chicken, or mix it with a little cream cheese and make a delicious dip for crackers and vegetables.
Prepare canning jars.
In a food processor, shred the following
10 large jalapenos
2 large red peppers.
Once shredded place in very large stock pot with the following
1.5 cups apple cider vinegar
6 cups sugar
1 tsp salt
Bring to a boil and boil for 10 minutes. The mixture will bubble a lot, so please make sure and use a very large pot.
After 10 minutes, add 1.5 packets of liquid pectin to the mixture and boil for 1 minutes. You must use liquid, the powdered pectin will not work.
let cool for a few minutes, then place in jars.
Unopened jars will last 1 year,
opened jars will last 2 weeks in the refrigerator.
