This burger might be over the top, but it was worth it. Jalapeño Poppers Smash Burgers are the next big hit this summer. Stuffed jalapeños just like jalapeño poppers that are pressed into a smash burger. Top with cheese, bacon, pickled red onions and chipotle sauce for the most insane meal. The STEAK MONSTER: Jalapeño Popper Stuffed NY Strip Roast
The strip loin is an underrated cut. It's also known as the top loin and it's where we get NY strip steaks. I used to think that ribeyes and rib roasts were the only way to go, but now when feeding a crowd, a whole strip loin is the way I do it. The strip is made up of the same
muscle as the eye of the ribeye and when covered in a compound butter then smoked, it's just as good and also about $100 cheaper.
Stuffing it with jalapeño poppers takes it to another level. It takes some patience hollowing out the holes, but it's a fun project that is guaranteed to impress your guests. The peppers get cooked just enough to take away the bite, but they still maintain some of the crunch.
Some tips: make the holes at an angle so that you can slice against the peppers at the end, and use tooth picks to hold the peppers in place. Let me know if you try it!
Compound Butter Ingredients:
-2 sticks of unsalted butter
-1.5T chopped garlic cloves
-1.5T shallots
-Several sprigs of rosemary
-Several sprigs of thyme
-1T BBQ Rub or salt & pepper
-1/2 package applewood smoked bacon
Compound Butter Directions:
-Chop finely: Garlic cloves, shallot, sprigs of rosemary and thyme.
-cook the bacon until crispy, then remove from heat and chop
-Mix all ingredients with room temp butter and BBQ rub.

The Best Jalapeño Poppers Recipe | How to Make Cheesy Chorizo Bacon Ranch Jalapeno Poppers
Cheesy Chorizo Bacon Ranch Jalapeño Poppers is a mouthful, but they are (in my opinion) the best jalapeno popper recipe and so easy to make!
This recipe combines the savory flavors of chorizo and cheese, accents it with that addictive ranch seasoning and stuffs it all into a fire roasted Jalapeno pepper. These poppers are easy to prep, just as easy to cook, and are a huge hit for parties or hungry households.
Ingredients:
8-12 Jalapeño Peppers
1 lb. Mexican Chorizo (or Spanish Chorizo, if cured skip the browning step)
8oz. Cream Cheese (soften by leaving out for a couple hours)
1 cup shredded cheese
6 strips bacon cooked and diced
2 cloves of minced garlic
1 tsp. cumin

1 tbsp. chopped chives

6 to 7 medium to large fresh jalapeño peppers
8 oz block (227 g) cream cheese
4 oz (113.5 g) white cheddar cheese
1/3 cup all purpose flour
2 large eggs
1 cup Panko bread crumbs
1/2 cup plain or seasoned bread crumbs
cooking oil for frying

JALAPENO POPPERS RECIPE
6 large JALAPENO peppers
8oz CREAM CHEESE
1 cup shredded CHEESE
4-5 cloves GARLIC (finely chopped)
about 1/4 cup CILANTRO (chopped)
1 tsp smoked PAPRIKA
1 tsp ONION POWDER
SALT and PEPPER to taste
(dill, cumin, cayenne, and cajun mix
go well in poppers--experiment
with your favorite seasonongs)
Set cream cheese out from fridge for at least 1/2 hour to allow time to soften.
Cut stems from peppers, but not enough to open the back of the pepper entirely, this shallow cut will leave enough of the top of the pepper in place to form a wall that will hold the cheese as it bakes. With a spoon, scoop out the seeds and ribs; your jalepeno should look like a little rowboat (without oars or lifejacket).
In a bowl, throughly mix cream cheese, shredded cheese, cilantro, and seasonings together.
Spoon cheese mixture into pepper boats. Fill each pepper entirely, but do not overfill--just to the top of each pepper--mounded cheese will only make a mess and disrupt the optimal cheese to pepper ratio.
In a skillet, on medium heat, melt 2-3 Tbsp butter. Add garlic and stir 1 minute. Turn off heat and add bread crumbs. Stir until butter is absorbed and garlic is mixed well with bread crumbs. Or, if you don't want to fool with garlic cloves--just substitute garlic powder.
Press peppers cheese side down into the crumb mixture, then turn over and mound extra crumb topping on the peppers.
Place peppers on a baking sheet and cook 20-25 minutes at 400 degrees F.
When the crumb topping is baked golden, remove and allow peppers to rest 5 minutes.
After that, you can do whatever your heart desires.
Enjoy.
