How To make Jalapeno Yeast Corn Muffins
2 oz Tofu
3/4 c Sugar
3 tb Shortening
3 ts Baking powder
1 ts Baking soda
1 ts Salt
1/2 ts Cream of tartar
3 ea Jalapeno peppers, seeded &
-- finely chopped 1 1/2 c Cornmeal
1 c Unbleached all-purpose flour
1/4 c Nutritional yeast
1 c Water
In a large bowl, cream together the tofu, sugar & shortening. Add the baking powder, baking soda, salt & cream of tartar. Mix well. Add the remaining ingredients & stir to ensure that the ingredients have been well combined. Spoon the batter into lightly oiled muffin pans. Bake in an oven preheated to 375F for about 30 minutes. Test with a skewer to see if they are done. If not done, return to the oven & test every 5 minutes. Cool on wire racks. Recipe by Mark Satterly

You guys have got to TRY THIS! This is the CREAMIEST, MOST VELVETY CORNBREAD I've ever tasted. Its slightly spicy and delicately sweet, and decadent without being overly rich, which will make you want to eat the entire batch! I apologize in advance.
As always this recipe is GLUTEN FREE and it can be easily adapted to be DAIRY FREE too! Just swap the butter out for coconut oil, olive oil, or even garlic oil ;) I hope you guys like this recipe and I cant wait to hear from you in the comments!

Dry Ingredients
· 1 cup all purpose flour
· 1 cup cornmeal
· 6 tablespoons brown sugar
· 1 tablespoon fresh thyme
· 1 tablespoon fresh parsley
· 1 tablespoon fresh basil
· 1 tablespoon fresh mint
· 1 tablespoon jalapeno, chopped
· 1 tablespoon green onion, sliced
· 1 teaspoon salt
· 1 tablespoon baking powder
Wet Ingredients
· 1 cup whole milk
· ½ cup melted butter
· 1 tablespoon oil
· 2 eggs whisked
Honey Butter Glaze
· 3 tbsp melted butter
· 3 tbsp pure honey (adjust to taste)
Method
Step 1: In a bowl, combine all of the dry ingredients and mix well; set aside.
Step 2: In a separate bowl, add all of the wet ingredients and mix well.
Step 3: Add ⅓ of the wet mixture at a time into the dry, mixing gently until fully incorporated. Do not overmix.
Step 4: Grease a muffin pan with butter or cooking spray and pour the batter evenly into each muffin cup.
Step 5: Bake at 400 degrees F for 15-20 minutes or until light golden brown.
Step 6: Remove from the oven and brush with warm honey butter glaze and enjoy!

Cornbread goes well with chili soup, but I don't like dry cornbread.
This recipe makes really tasty and moist cornbread.
Ingredients :
Basic cornbread :
- 1 1/4 C cornmeal
- 1 C all-purpose flour
- 1 C milk
- 1 egg
- 1 Tbsp baking powder
- 1/2 C sugar
- 1/2 tsp salt
- 1/2 C melted butter
Additional, feel free to add what you like. Mine :
- green onion
- sour cream, make your cornbread soft and moist
- jalapeno
- shredded cheese (I love cheddar)
- frozen corn
