How To make Jamaican Meat Patties
2 tb Oilve oil
1 Onion;finely chopped
3 Garlic cloves;finely chopped
1 lb Ground beef; lean
1 tb Curry powder
1 ts -salt
1/2 ts -freshly ground black pepper
1/2 c Bread crumbs, dry
1/2 c Chicken stock ;or water
2 Green onions;finely chopped
PAStrY:
2 c Flour;all purpose
1/2 ts Tumeric
1/4 ts -salt
2/3 c Shortening or Butter;cold,
-diced 1/4 c -ice water or more if
-necessary 1 Egg; lightly beaten
Heat oil in large heavy skillet. Add onions and garlic. Cook, stirring till onion wilts. Add ground meat. Cook, stirring until meat is browned and combined with onions. Sprinkle with curry, salt and pepper. Cook about 5 minutes. Stir in breadcrumbs and stock or water. Cook, stirring often, about 20 minutes. Mixture should be thick but not dry. Stirin green onions. Make pastry by combining flour with tumeric and salt. Cut in butter or shortening until in tiny bites. Add water; gather into a ball. Roll out to about 1/4" thivkness and cut into 4" circles. Gather remaining dough together and lightly cut out again. Place about 1 Tbsp filling on each circle. Brush edges with lightly beaten egg, fold over and seal. Preheat oven to 400F. Place patties on cookie sheets lined with aluminium foil. Brush lightly with remaining lightly beaten egg. Bake 25 to 30 till browned. MAKES: Approx 30 Patties These can be made ahead and frozen. How to make Jamaican Beef Patties
Jamaican Beef Patties Recipe
Crust: In a large bowl combine 3 cups of all purpose flour, 3 packs of sodium free beef bouillon cube seasoning, 4 tbs of turmeric powder, 2 tsps of sugar, 1 tsp of salt. Stir well
Add chopped up pieces of 1-1/2 stick of cold butter. Mash into flour mixture until it becomes crumbs {as shown in the video}. Add 1/3 cup of Cold Ice Water to flour mixture. Massage gently into flour mixture until it becomes a big ball of dough. {DO NOT OVER KNEAD DOUGH]
Wrap in plastic wrap and place in refrigerator for at least 1 hour.
Filling: Chop up 4-5 pieces of scallions, 2 scotch bonnet peppers, 1 medium yellow onion, along with 1 tsp of minced garlic.
Place in a pan with 1/4 cup of veg oil over high heat.
After 3 minutes add 1 lb of ground beef.
Once ground beef turns brown season with 1/4 cup of breadcrumbs, 3 tbs of ketchup, 3 packs of sodium free beef bouillon cube seasoning, 2 tsp of onion powder, 2 tsp of paprika, 2 tsp of salt, 2 tsp of thyme seasoning, 1 tsp of black pepper and 1 tsp of ground Jamaican all spice seasoning.
Stir in well and reduce heat to low
Add 1 cup of water and cook on low until it cooks down into a nice gravy
Dough: Poor about 1/2 cup of flour onto a wide flat surface like a counter.....cut the dough ball up into 5-8 pieces.
One at a time... flatten dough with rolling pin.... sprinkle flour on both sides.
Once you've obtained desired thickness of dough, engrave a round small bowl inside down into the dough to create a circular shape
Scoop 3-4 tbs of ground beef onto dough and fold other side over meat and press the ends together. Engrave fork prints into ends of pattie
Place oven to 400 degrees
Place patties onto a baking sheet, rub patties down with a little butter and then onto a baking pan and bake until done or for about 20-25 minutes

1lbs of butter unsalted (soften)
225gwater (chilled water) or 8oz
1 &1/4 tablespoon of curry powder
1 teaspoon turmeric powder
FOR FILLING
1lbs ground beef
1/2 cup onion chopped
1/2 cup bell peppers chopped
2clove garlic chopped
Tbls ginger chopped
1/2 cup scallions
I scotch bonnet pepper chopped
1Tbls All purpose seasoning
1Tbls garlic powder
1tbls complete seasoning
Teaspoon black pepper
Table spoon of each
Browning
Oyster sauce
Soy sauce
Ketchup
Bread crumbs 1/2 cup
Salt if needed
