Cooking with Karen: Spicy Meatloaf
Spicy Meatloaf
3-4 servings
Ingredients
2 eggs, beaten
¾ c milk
½ c Panko bread crumbs (Italian style)
¼ c onion, finely chopped
1 jalapeno, finely chopped
3 T minced garlic
1½ t dried parsley or 2 T chopped fresh Italian parsley
½ t ground sage
1 t Trim Tabb’s Pig Powder
1 T Underwood Ranches Spicy BBQ Sauce
dash of salt
1/8 t black pepper
1½ pounds ground beef (80/20 suggested)
Glaze:
2 T Underwood Ranches Bibimbap
2 T ketchup
2 T brown sugar
1 t dry mustard
1. Preheat oven to 350 degrees F.
2. In a large bowl, combine eggs and milk. Add in bread crumbs, onion, jalapeno, garlic, parsley, sage, Pig Powder, UR’s Spicy BBQ Sauce, salt, and pepper; stir to combine.
3. Add ground beef and mix together by hand.
4. Pat mixture into a ring in a glass pie plate or shallow baking pan.
5. Bake at 350 for 50 minutes. Remove from oven and spoon off excess fat.
6. Combine Glaze ingredients and spread over meat. Bake for 10 minutes.
7. Tender, moist and flavorful! Great with mashed potatoes!!

KINDER'S Meatloaf Mix Review.....Yay or Nay???? | Shoutout to Fein Dining
I love Kinder's spices, but now they have come out with a meatloaf mix!! So of course I had to give it a go! Overall, We thought it was quite good!! My Husband liked it a bit more than I did....but Im not a huge meatloaf lover in general. But it has lots of flavor and is really convenient...so give it a try!!

This Delicious Meatloaf recipe is filled with great ingredients that is tasty and satisfying. Here is the recipe:
1 pound ground beef
1/2 cup grated parmesan cheese
1/4 cup finely chopped onion
1/4 cup finely chopped bell pepper
1 egg, lightly beaten
2 tablespoons Worcestershire sauce
1 tablespoon Dijon mustard
1/2 teaspoon garlic powder
1/2 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup ketchup
1 tablespoons brown sugar(optional)
Secret ingredient: 1/4 cup coffee
Method:
Preheat the oven to 375°F.
In a large mixing bowl, combine the ground beef, parmesan cheese, onion, bell pepper, egg, Worcestershire sauce, Dijon mustard, garlic powder, thyme, salt, and black pepper. Mix well until all ingredients are evenly distributed.
Pour the coffee over the meat mixture and mix again until the coffee is fully incorporated. The coffee will add a rich, deep flavor to the meatloaf. Put spoonfuls into muffin pans or:
Form the mixture into a loaf shape and place it in a greased loaf pan. Spread some ketchup over the top of meatloaf.
Bake the meatloaf in the preheated oven for 30-35 minutes, or until the internal temperature reaches 160°F.
Remove the meatloaf from the oven and let it rest for 5-10 minutes before slicing and serving.
