CAKE:
3 oz Mixed fruit jello
1 1/3 c Sugar
2 c Flour
1/2 ts Salt
1 ts Baking powder
1/2 ts Baking soda
5 Eggs
1 1/4 c Cooking oil
3/4 c Key Largo liqueur *
GLAZE:
1/2 c Powdered sugar
1/2 c Key Largo Liqueur *
TOPPING:
12 oz Cool Whip
1 cn Mixed tropical fruit, drain
* any tropical flavored liqueur ~------------------------------------------------------------------------- Remove 1 Tbls of jello powder and set aside. Mix sugar, jello powder, flour, salt, baking powder, and baking soda. Add oil, eggs, and liqueur. Beat 3-4 minutes. Grease and flour a 9 x 13 pan. Bake at 350?F for 25 - 30 minutes. Cool and poke holes in cake. Mix powdered sugar and liqueur. Pour evenly over cake. Refrigerate. Cover with Whipped topping . Garnish with a can of mixed tropical fruit, well drained.

Cake:
1 cup butter, softened
½ cup shortening
3 cups sugar
6 large eggs
3 cups all purpose flour
½ teaspoon baking powder
1/8 teaspoon salt
1 cup milk
1 teaspoon vanilla extract
1 teaspoon lime zest
¼ cup fresh Key Lime juice
Key Lime Glaze:
1 cup powdered sugar
2 Tablespoons fresh Key Lime juice
½ teaspoon vanilla extract
Preheat oven to 325°.
Grease and flour a 10” (12 cup) tube pan and set aside.
Beat butter and shortening at medium speed with a heavy-duty electric stand mixer until creamy. Gradually add sugar, beating at medium speed until light and fluffy. Add eggs, 1 at a time, beating just until blended after each addition.
Stir together flour, baking powder, and salt. Add to butter mixture alternately with milk, beginning and ending with flour mixture. Beat at low speed just until blended after each addition. Stir in vanilla, lime zest, and lime juice. Pour batter into a greased and floured 10” (12 cup) tube pan.
Bake at 325° for 1 hour and 15 minutes to 1 hour and 20 minutes or until a long wooden pick inserted in the center comes out clean. Cool in pan on wire rack 10-15 minutes; remove from pan to wire rack.
Prepare Key Lime Glaze by whisking together the powdered sugar, fresh Key Lime Juice and vanilla until smooth.
Immediately brush over top and sides of cake. Cool completely (about 1 hour).

Prepare fruits
1/2 cup prunes
1/2 cup cherries
1/2 cup cranberries
1/2 /cup raisins
1/2 cup grape juice
Blend to a chunky consistency
This should give you 1 1/2 cups of blended fruits.
Cake batter
1 1/2 cups blended fruits
1 2/3 cups all purpose flour
2 tsp baking powder
1/2 cup light brown sugar
1/2 cup granulated sugar
2 sticks butter= 1 cup
4 eggs
1 tsp vanilla extract
1 tsp almond extract
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp ground cloves
1/2 tsp ground ginger
1 tsp lemon zest
1/3 cup of regular fruits for garnish toss them in flour first before adding to prevent them sinking to the bottom
Pre heat oven to 325 bake for 1 hour or at least until you insert a skewer or tooth pick and it comes out clean.

KEY LIME POUND CAKE With LEMON CURD GLAZE

INGREDIENTS AND MEASUREMENTS
1 cup of butter (2 sticks) unsalted
½ cup of canola oil
5 eggs
1 3 ounce box of lime Jell-O
2 1/2 cups of sugar
3 cups of all-purpose flour
½ teaspoon of baking powder
½ teaspoon of salt
1 cup of whole milk
1 teaspoon of key lime extract
6 ounces of lemon curd (found in the jelly section of your grocery store or Walmart)
1 ½ tablespoons of key lime juice by Nellie and Joe
Instructions:
Preheat oven to 325 degrees and butter and flour tube pan well. Set aside. Cream the sugar, butter,oil and lime jello for 5 minutes, color will be a light green. Add 1 egg at a time for 10 seconds each. Sift the flour, salt and baking powder together set aside.Add 1 teaspoon of lime extract to the mixture. Alternate the milk and flour mixture starting with the milk mixing lightly making sure not to over mix. Place in Tube Pan spreading evenly for about 1 hour and 15 minutes or until toothpick inserted in the middle comes at clean. Meanwhile mix the lemon curd and key lime juice in a bowl mixing well until smooth. Once cake is finished let cool for about ten to 15 minutes.Turn on to plate cake upside down then take lemon curd mixture and brush on with pastry brush while still warm. Enjoy
