How To make Khachapuri (Georgian Cheese Pie)
2 1/2 c Unbleached All Purpose Flour
3/4 ts Salt
1 lg Egg
3 tb Vegetable Oil
1/2 c Club Soda; Or More If Needed
-, At Room Temperature 12 tb Unsalted (Sweet) Butter;
- 1 1/2 Sticks, Melted
RED BEAN FILLING:

1 c Dried Red Beans; Soaked
-Overnight In Water To Cover Salt And Plenty Of Freshly -Ground Black Pepper; To -Taste 1/4 c Olive Oil
1 1/4 c Onions; Finely Chopped
1/2 c Cilantro; Finely Chopped
Sift the flour and salt into a large bowl and make a well in the middle. Pour in the egg, oil, and club soda and stir into the flour, adding more club soda if necessary, ot make a rather soft dough. Transfer the dough to a floured board and knead until smooth and elastic, about 10 minutes. Shape the dough into a ball, cover with a linen or cotton (not terry cloth) kitchen towel and let stand for 1 hour. Divide the dough into four parts and shape each one into a ball. Let stand, covered, for 15 minutes. Preheat the oven to 350 Degrees F. and butter two large baking sheets. On a floured surface, roll out one of the balls into an 1/8-inch thick square. Brush the dough with some of the melted butter Dip your fingers into the melted butter and pull the edges of the dough in different directions, stretching it evenly until it is almost transparently thin. Don't worry if the dough tears, as you will be folding it up. With a sharp knife, trim the edges of the dough to from an even square. Fold the square in half, brush the surface generously with the melted d fold in half again crosswise to from a smaller square. It should be approximately 6 to 7 inches. It is isn't, pull it out slightly to fit the dimensions. Brush the square with butter. Shape one-fourth of the filling into a ball and place in the center of the square. Fold in the corners of the square like an envelope. With the palm of your hand, flatten the pie so it is about 1 inch thick. Brush the top with melted butter and carefully transfer to a prepared baking sheet. Repeat the procedure with the rest of the dough and filling. Bake the pies in the middle of the oven, until golden brown, about 35 minutes. Serve warm. Makes 4 Pies for 8 Servings RED BEAN FILLING: Drain the beans and place them in a saucepan along with enough fresh water to cover by at least 2-inches. Bring to a boil and add salt, then reduce the heat to medium-low. Cook the beans, partially covered, until almost mushy, about 1 1/2 hours. While the beans are cooking, heat the oil in a medium size skillet, over medium heat, and add the onion to saute it. Stir occasionally, until dark brown, about 15 to 20 minutes. When the beans are done, drain well and mash. Add the sauteed onions and their cooking fat and the cilantro. Season generously with salt and freshly ground black pepper. Cool to room temperature. Makes enough filling for 4 pies.

During our recent trip in the Caucasus region, specifically in Georgia(country), Armenia and Russia, these are so famous that there are many variations of Georgian cheese bread that depend on the region and cook. Gaining popularity in American food cities like Los Angeles where there is a large population from Georgia’s neighboring country, Armenia. Khachapuri is a warm boat-shaped yeast bread stuffed with multiple different kinds of cheese and an egg in the center. My children loved this cheese bread so much that can be eaten from breakfast till dinner. :)
Here's what youll need:
2 ¼ cups al purpose flour or bread flour (300g)
1/2 cup whole milk (100g)
1/2 cup warm water (100g)
2 tablespoon sugar (15g)
2¼ teaspoon active dry yeast (11g)
1 teaspoon salt (5g)
2 tablespoon oil (15g)
mozzarella 200g
feta 200g
cheddar 100g
2 eggs

Khachapuri is a simple delicious bread from Georgia. Stuffed with cheese and served with an egg its perfect for brunch.
INGREDIENTS
80ml Warm water
120ml Warm full fat milk
16g fresh yeast or 7g fast active yeast
210g all purpose flour (extra flour for kneading)
11/2 tsp salt
1 tsp sugar
tbsp olive oil (drop in after yeast is activated - forgot to mention i vid)
2 eggs (1 for egg wash)
150g Emmental
150g Feta
150g Mozzarella

You know pizza, right? But have you heard of khachapuri? This cheese-filled bread is a national treasure for Georgians and one of their national dishes. They eat it at any time, for breakfast, lunch or dinner. You could say that khachapuri is the Georgian version of pizza, but even more versatile, as it comes in 47 different varieties. For example, there is the boat-shaped Adzharian khachapuri, the version from Imereti, which is round and flat and topped with cheese. And Achma khachapuri has several layers, similar to a lasagne. Each type is typical of a particular region. In this video, we show you how ajarian khachaouri is made.

Khachapuri/Georgian Cheese Bread!
Khachapuri is traditional Georgian cheese bread.
It is so popular in Georgia that every single region has its own recipe.
Most popular recipes use homemade buttermilk which is called matzoni and it is much thinner consistency that your traditional buttermilk. Therefor I am using my own that was left from making my homemade butter. Also, mix of cheeses is very important and in all Khachapuries georgian cheese Sulguni is used as a main cheese with adding couple different cheeses.
I have created my own mix that I think would be perfect for this dish.
For the dough you will need:
500ml (2cups) of buttermilk
2 eggs
4-5 cups of flour
1 ts salt
1 ts baking soda
1 ts table vinegar
You need to make soft dough and let rest for 30 min.
Use oil kneading your dough rather than flour.
Excess flour will make your dough tougher.
For cheese filling you will need:
250g provolone cheese
200g queso fresco
200g feta
2 egg yolks
Shred all cheeses and add egg yolk.
You can add a little bit of freshly ground black pepper.
Your filling is ready.
After your dough have rested cut it in half. (We are making two breads)
Put a little bit more on a table surface and form one piece of a dough into circle, then using your hands spread it out to whatever size of a skillet you using. Put half of cheese filling and pinch the ends towards center. Turn upside down and spread to a 1 inch thick disk.
I will be using a cast iron skillet to cook my Khachapuri.
You neet to preheated and without using any oil put your Khachapuri seam down on a dry skillet.
Reduce the heat and cook it for about 2-3 min on each side.
Make sure it does not burn.
Take out and spread butter on it.
Repeat the same process for the other piece of dough.
Wait a little bit to cut it. You do not want your cheese filling to run out!
Enjoy your Khachapury with fresh salads!
