How To Eat Proper Korean BBQ - Galbi, Hemul Pajeon, Gopchang Jeongol
How you doin' guys, Jason Song here. Today I'm going to show you how to eat a proper Korean BBQ! Let's go!
First up, is the hemul pajeon, or seafood scallion pancake. This is an appetizer fried from a batter of eggs, flour, scallions, shrimp and squid. Make sure to dip this is in a bit of soy sauce that comes with the dish! And enjoy! Alright guys - this is a pro tip: when the server brings out the coals, toast the hemul pajeon on the grill for a nice crispy smokey flavor!
Plus it's fun to do while you wait for the meat!
Check it out guys the kalbi finally arrived! Korean bbq is known for these short ribs and these are my favorite! Don't worry about doing anything the server will come by and grill them up for you. Oh man the smell is incredible! They'll cut it up for you too - this is customary so don't feel bad - they're just doing their job! Mmmm looks good right? let's give it a taste
Alright so here we have lettuce that always comes out with korean bbq. Here we're making a lettuce wrap called Ssam. And as you can see my mom know what I like in it. Some chilis, a piece of raw garlic, and of course you have to have ssamjang - which is a fermented soybean paste mixed with red chili paste sesame oil, vinegar, and garlic. It has a strong taste so don't use too much!
Next up is gopchang jeongol which is beef intestine stew. Koreans are big into soups or stews after eating BBQ and this is actually my favorite! It comes out in a big hot pot like this and you share it with everyone.
So this piece is the tripe.. it has a nice soft chew to it - almost like a tendon.
Its really good. And this is the intestine my favorite part. It's slightly chewy but gooey inside with fat. Oh yeaaa! Here's another piece of the tripe. And here's a piece of tofu.. just soaked with all the stew juices.
Guys, make sure to take a spoon full of that delicious stew! it's made from beef broth and spicy red chilis. Oh yea it has some udon noodles in there too!
I know this was a short food review but I figured the video would show you how to properly eat Korean food, instead of me trying to explain in detail. Everything was so yummy and tasty! Believe it or not, even as a Korean, I don't have Korean BBQ that often! So when I do have it, it is worth it every single time! Moderation is key to deliciousness! Ingredients for this Recipe:
• ½ peeled yellow onion
• 5 large garlic cloves
• 1 teaspoon fresh ginger, trimmed
• 1 cup water
• 1 cup soy sauce
• ½ cup packed light brown sugar
• 3 tablespoons mirin
• ¼ cup honey
• 3 tablespoons sesame oil
• 2 teaspoons sesame seeds
• 1 peeled and seeded Asian pear
• 1 peeled and seeded Fuji apple
• ½ peeled kiwi
• ¼ cup sliced green onions
• ½ teaspoon ground pepper
• 3 pounds kalbi cut short ribs
Serves 4
Prep Time: 20 minutes
Cook Time: 10 minutes
Marinating Time: 12 hours
Procedures:
1. Add all of the ingredients except for the ribs to a blender and blend on high speed until smooth.
2. Transfer the mixture to a plastic zip bag and completely submerge the ribs in the marinade.
3. Marinate in the refrigerator for 12 hours or overnight.
4. Add the ribs right from the marinade to a hot grill in between 450° and 550° and cook for 3 to 4 minutes per side or until dark grill marks have formed.
5. Remove from the grill, garnish with sesame seeds and sliced green onions and serve right away.
CHEF NOTES:
• You can also add in 1 teaspoon of salt and 2 tablespoons of regular sugar to make the marinade more intense in flavor.
• The marinade will last up to 4 days if you choose not to marinate the short ribs right away.
• I like to move the marinated ribs around in the bag every 4-6 hours to make sure they are getting exposed to the marinade.
• Don’t marinate the ribs for more than 24 hours
